I initially thought I had to give up peas when I started doing keto. Oh my, how excited I was to find I can eat peas, in moderation, on my keto plan! Growing up in Wisconsin, on a small dairy farm, we had a huge garden that was about an acre in size. I have fond memories of shucking peas and using them in all kinds of dishes. You can eat peas raw, partially cooked, or fully cooked. For this salad we’re using frozen peas. Frozen peas have been partially cooked, so we just need to thaw them before adding them to our salad. Half of a cup of frozen peas contains just 8 net grams of carbs and peas provide a good source of fiber. It’s also easy to incorporate peas into your diet as they can be added to casseroles, salads, and soups.
What other ingredients go into this keto cauliflower pea salad?
To our peas, we add chopped cauliflower, diced red onions, fried and crumbled bacon, and cubed cheddar cheese. The cauliflower gives our salad amazing texture and flavor. I just roughly chopped mine into small pieces for this salad. I love the color red onions bring to this salad, but you can use yellow or white onions if you’d prefer. You can use mild, medium, or sharp cheddar depending on your taste preference. You also have some great options for cheese if you don’t want to use cheddar. Some good options include colby, gouda, gruyere, Monterey jack, mozzarella, provolone, and Swiss cheese. For our dressing, we combine mayonnaise, sour cream, apple cider vinegar, keto granulated sugar, salt, and pepper. This is an easy but amazingly delicious and creamy dressing. You can give your salad a taste and add more sugar, salt, and pepper to taste.

Ingredients
- ½ cup keto mayonnaise
- ½ cup sour cream
- 1 tablespoon apple cider vinegar
- 1 tablespoon granulated sugar substitute (Swerve)
- ½ teaspoon salt
- ¼ teaspoon pepper
- 3 cups chopped cauliflower
- ½ small red onion, diced
- 8 slices bacon, fried and crumbled
- 8 ounces cheddar cheese, cubed
- 1 (12 ounce) package frozen peas, thawed
Instructions
1. In a small mixing bowl, add mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper. Stir to combine. Set aside.
2. In a large mixing bowl, add cauliflower, diced onions, bacon, and cubed cheese. Stir to combine ingredients.
3. Add dressing. Stir to combine. Add peas and gently toss to combine.
4. Refrigerate until ready to serve.
