I was so excited when I found Simply Delish flavored gelatin. I don’t like some of the ingredients often added to sugar free gelatin mixes. Some of the more common ones I avoid include aspartame, maltodextrin, sucralose, and artificial flavoring and coloring. The raspberry flavored Simply Delish ingredient list includes Erythritol, Carrageenan, Citric Acid, Potassium Citrate, Natural Color (Beet, Beta Carotene), Natural Flavor (Raspberry), and Stevia Extract. Carrageenan is an additive used to thicken, emulsify, and preserve foods. Some say it can cause inflammation, but I’m ok using it occasionally. Besides raspberry, Simply Delish also makes black cherry, lime, orange, peach, and strawberry flavored gelatin. They also carry a line of pudding mixes with fun flavors including banana, butterscotch, chocolate, lemon, strawberry, and vanilla.
How do I make the raspberry sauce for this keto raspberry jello salad?
It’s incredibly easy to make the raspberry sauce that goes into this dessert. Using fresh raspberries adds amazing flavor to the dessert as well. To make the sauce, we combine fresh raspberries and fresh lemon juice in a small saucepan. I love having fresh lemons on hand for all kinds of dishes, so I used fresh lemon juice to make this dessert. You can absolutely use bottled lemon juice if you’d like. You’ll want to bring this mixture to a boil over medium high heat, then decrease heat to medium and cook for about 5 minutes. I use a spoon to stir the sauce and to mash the raspberries while they cook. To remove the seeds and have a smooth salad, I recommend straining this sauce by pressing it through a fine mesh sieve. You can then discard the seeds and will be left with a completely liquid sauce.

This is an easy dish to make, but I do have a few tips for making it. Since we need to refrigerate our raspberry gelatin to allow it to set, I make it first. You can also make the gelatin and refrigerate it overnight before making the salad. I pop the mixing bowl and beaters I’ll be using to make my whipped cream into the freezer before making my raspberry sauce. Then while the raspberry sauce is cooling in the refrigerator, I make the whipped cream. We make our homemade whipped cream by combining heaving whipping cream, keto powdered sugar, and vanilla into our chilled bowl and beating until stiff peaks form. Stiff peaks mean when you remove the beaters, they form peaks which completely hold their shape. Then you’ll add your cooled raspberry sauce, beat until combined, and finally add the gelatin and beat until combined.

Keto Raspberry Jello Salad
This keto raspberry jello salad is a creamy and delightful salad! It’s perfect to serve as a side or as a dessert!
Ingredients
- 1 (0.7 ounce) package Simply Delish Raspberry Jel
- ⅓ cup cold water
- 1⅓ cup boiling water
- 4 ounces fresh raspberries
- Juice of 1 small lemon
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar substitute (Swerve)
- 1 teaspoon vanilla
- Optional: top with additional fresh raspberries
Instructions
1. In a medium mixing bowl, add cold water. Stir in raspberry jel powder until dissolved. Add boiling water.
2. Pour mixture into a shallow dish. Refrigerate 1-2 hours or until set.
3. In a small saucepan, add raspberries and lemon juice. Bring to a boil over medium high heat. Decrease heat to medium and cook 5 minutes, stirring occasionally and mashing berries with a spoon.
4. Press mixture through a fine mesh sieve. Discard seeds. Refrigerate sauce 10 minutes.
5. Chill a large mixing bowl and beaters 15-20 minutes before using. To the chilled bowl, add heavy whipping cream, powdered sugar, and vanilla.
6. Beat until stiff peaks form. Add raspberry sauce and beat to combine. Add raspberry gelatin and beat to combine.
7. Serve immediately, or refrigerate until ready to serve. Top with additional fresh raspberries if desired.
