Growing up on a dairy farm in Wisconsin, every year we grew lots of cucumbers in our huge garden. We ate them plain or with a sprinkle of salt, and we often made delicious salads with them. Cucumbers are an awesome keto food choice. They’re low in calories and low in carbs. Fun fact for the day! Cucumbers are made up of around 96% water. For this salad, I used regular cucumbers, also known as slicing cucumbers. If you’d prefer, you can use English cucumbers to make this appetizer. English cucumbers are longer and thinner than regular cucumbers and you’ll find them wrapped in plastic. Whichever kind of cucumber you use, you don’t have to peel them. If you’d like, for a pretty presentation you can partially peel your cucumbers to give them a striped appearance. Once you slice your cucumbers, I recommend drying them with paper towels.
What other ingredients go into these low carb cucumber salami bites?
We make a quick, easy, and creamy topping for our salami bites. To do this we combine cream cheese with sour cream, garlic powder, onion powder, and paprika. You can use regular or smoked paprika depending on your taste preference. I like to make this mixture first and set it aside while I prep the rest of the ingredients. The other toppings for our cucumber bites are salami and cheese. You have some great options for the type of meat and cheese you use for this appetizer. I used hard salami. Some other great options include Genoa, Sopressata, Spanish chorizo, or thick cut pepperoni. For the cheese, I used medium cheddar. Alternately, you can use mild or sharp cheddar. You can also use colby, colby jack, gouda, gruyere, Monterey jack, mozzarella, provolone, or Swiss cheese. If you’d like to add a little heat, you could use pepper jack cheese.

This is a fun and easy appetizer to make, but I do have a few helpful tips for you. First, when making the creamy topping, you’ll want to start with softened cream cheese to create a perfectly smooth mixture. Next, you may want to dab your salami lightly with a paper towel to remove excess grease. I bought salami which was already sliced, but if you buy it unsliced, you’ll want to cut it into similar sized pieces. For the cheese, you’ll also want to cut it into similar sized pieces. Last, to assemble, I simply used a spoon to top my cucumber pieces with the cream cheese mixture. Then I pressed the salami onto the cream cheese mixture and topped each with a piece of cheese. These appetizer bites hold together well, but if you’d like, you can secure them with an appetizer toothpick or bamboo skewer.

These low carb cucumber salami bites are an amazingly fun and delicious appetizer! They’ll be a huge hit every time you serve them!
Ingredients
- 2 large cucumbers, sliced into 40 pieces
- 8 ounces cream cheese, softened
- 3 tablespoons sour cream
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- 40 slices salami
- 12 ounces cheddar cheese, cut into 40 pieces
Instructions
1. Dry sliced cucumbers with paper towels and place onto a large plate or platter.
2. In a medium mixing bowl, add cream cheese, sour cream, garlic powder, onion powder, and paprika. Using an electric mixer, beat until combined and smooth.
3. Spoon mixture evenly onto cucumber slices.
4. Top each piece of cucumber with a slice of salami and then with a slice of cheese.
