Ingredients
- 1 tablespoon butter
- 2 tablespoons onion, diced
- 4 garlic cloves, minced
- 5 cups broccoli, chopped into small pieces
- 4 cups chicken broth
- 1 cup heavy whipping cream
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon pepper
- ¼ teaspoon nutmeg
- ½ teaspoon xanthan gum
- 3 cups shredded cheddar cheese
- Additional shredded cheddar cheese for topping, optional
Instructions
1. In a large stockpot, over medium low heat, melt butter. Add onions and saute for 3-4 minutes, or until onions start to soften. Add garlic during last minute.
2. Add broccoli, chicken broth, heavy cream, paprika, salt, pepper, and nutmeg.
3. Increase heat to medium high. Simmer, stirring occasionally, until broccoli is tender, 10-20 minutes.
4. Decrease heat to medium low. Sprinkle xanthan gum over soup. Stir and let thicken, 4-5 minutes.
5. Add cheese, 1 cup at a time, allowing cheese to melt after each addition, stirring occasionally.
6. Serve immediately. Sprinkle with additional shredded cheddar cheese if desired.
