Peppers and onions are such an awesome combination, and when used in moderation, they’re also both great keto food choices. I love adding peppers and onions to all kinds of dishes! They’re also great served as a delicious side dish simply grilled or sauteed. For this dish, you can use any color or color combination of bell peppers. I used an orange, a red, and a yellow pepper, but green peppers are perfect to use as well. For the onion, I used a large yellow onion. Alternately, a red onion would work great too. You can also use ½ red and ½ yellow onion if you’d like. I cut my peppers and onion into strips for this dish. I usually combine butter and olive oil when I saute things and that’s what I used for this dish. You can use all butter or all olive oil if you’d prefer.
What other ingredients are added to these mushrooms, peppers, and onions?
For our seasoning mix, we add garlic powder, paprika, salt, and pepper. You can substitute smoked paprika in place of regular paprika if you’d prefer a hint of smoky flavor. Also, if you’d like, you can omit the garlic powder and add some fresh minced garlic. If so, I’d recommend adding it at the same time you add the mushrooms. For mushrooms, I used cremini mushrooms. I find they add amazing mushroom flavor and a nice earthy flavor. Alternately, you can use white mushrooms, also known as button mushrooms, for this dish. I sliced my mushrooms, but you can also quarter them if you’d prefer. While your mushrooms cook, they’ll release some water. This liquid won’t all cook off and you’ll be left with some delicious skillet juices. I serve my dish with the juices, but if you’d prefer, you can drain some of the liquid off before serving.

It’s easy enough to serve for everyday meals, but it’s also perfect to serve for special occasion meals. These mushrooms, peppers, and onions are also perfect to serve with fajitas, keto tacos, keto sandwiches, and lettuce wraps. You can also serve them with pulled chicken, pulled pork, or keto meatloaf. It’s also a great dish to serve with all kinds of keto casseroles or with your favorite egg dishes for a fun breakfast or brunch option. This dish also reheats well either in the microwave or in a skillet on the stovetop, so it’s great to serve for leftovers as well!

Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 bell peppers, cut into strips
- 1 large yellow onion, cut into strips
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon pepper
- 16 ounces mushrooms, sliced
Instructions
1. In a large skillet, over medium high heat, melt butter with olive oil.
2. Add peppers, onions, garlic powder, paprika, salt, and pepper. Toss to combine ingredients.
3. Cover and cook for 10 minutes, stirring every few minutes.
4. Add mushrooms and toss to combine.
5. Cover and cook for 8-10 minutes, or until mushrooms are softened.
6. You can serve with the pan juices or drain juices if desired.
