Brining these easy keto chicken bites results in chicken that is always moist and never dry! We add just a few simple but delicious spices to make these chicken bites, and cooking the chicken takes only minutes. This chicken is awesome served as is or you can serve it over some cauliflower rice.

I highly recommend you brine this chicken, even if just for 30-60 minutes, as it results in the most amazingly juicy chicken! It’s also very easy to do. We simply combine water, salt, and keto sugar in either a bowl, plastic container, or resealable plastic bag. For sugar, I used the Swerve brand. Alternately, you can use your favorite keto sugar to make your brine. You’ll want to stir the brine until most of the salt and sugar is dissolved. After adding your chicken pieces, you’ll want to allow your chicken to brine, covered in the refrigerator, for an hour or two or overnight. I usually brine my chicken overnight, then it’s all ready to cook the next day. When you’re ready to cook your chicken, you’ll want to discard the brine and pat your chicken pieces dry.

This chicken is incredibly easy to make, but there are a few things you can do to ensure yours comes out perfect every time. When sauteing my chicken, I use a combination of olive oil and butter. I think this creates amazing flavor. For seasoning, we simply use garlic powder, onion powder, salt, and pepper. You have a couple great options for how you season your chicken. You can toss the chicken with the seasoning to evenly coat all the pieces with the seasoning. Alternately, after placing your chicken in the skillet, you can use ½ of your seasonings and sprinkle it evenly over the chicken. Then when you flip your chicken, you can evenly sprinkle the remaining seasoning over the chicken pieces. If you want to add a touch of heat to your chicken, you can add red pepper flakes or a few dashes of your favorite hot sauce.
What are some ways I can serve these easy keto chicken bites?
You have some awesome low carb options for serving this chicken. You can always start your meal with a keto salad. A couple of our favorites are Caesar salads and wedge salads. A nice bowl of soup is another great meal starter. You can also add some keto biscuits, chaffles, cornbread, or English muffins to your meal. You can always serve your chicken with a side of cooked vegetables. Some great low carb options include asparagus, broccoli, Brussels sprouts, cabbage dishes, cauliflower, green beans, and spinach. One of my favorites is keto creamed spinach. If you’d like to serve your chicken with a mashed dish, we especially enjoy mashed turnips and rutabagas and mashed kohlrabi. It’s also incredibly easy to make your own brown gravy or chicken gravy to serve with your meal!

Ingredients
- 2 cups water
- 1½ tablespoons granulated sugar substitute (Swerve)
- 1½ tablespoons salt
- 1½ pounds chicken breast, cut into cubes
- 2 tablespoons olive oil
- 1 tablespoon butter
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. Add water, sugar, and salt to a bowl or dish. Stir until sugar and salt are most dissolved. Add cubed chicken. Refrigerate 1-2 hours or overnight.
2. When ready to cook chicken, drain and discard brining liquid from chicken. Pat chicken dry with paper towels.
3. Add olive oil and butter to a large skillet. Heat on medium high heat.
4. Coat chicken pieces evenly with garlic and onion powder, salt, and pepper.
5. Add to skillet and cook for 4 minutes. Flip chicken and cook 3-4 minutes, or to 165 degrees. Cook chicken in batches if necessary.
