I lightly dry my chicken with paper towels before adding it to the crockpot and seasoning it. You’ll want to cook your chicken until it reaches 165 degrees. At this point, you can remove and serve your chicken. If you’d like crispier skin, you can broil your chicken in the oven for a few minutes. Your chicken will contain zero carbs, but if you serve it with the carrots, celery, and onions, that will add a few carbs to each serving.

Ingredients
- 3 carrots, peeled and cut into pieces
- 3 celery stalks, cut into pieces
- 1 medium onion, chopped
- 1 cup chicken broth
- 1 whole chicken, 5-6 pounds
- 1 teaspoon garlic salt
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
1. Place carrots, celery, and onion on bottom of crockpot in a single layer.
2. Pour chicken broth over vegetables.
3. Place chicken on top of vegetables.
4. Sprinkle garlic salt, Italian seasoning, salt, and pepper evenly over chicken.
5. Cook on high 4 hours, until chicken reaches at least 165 degrees.
