This keto chicken cordon bleu casserole is true comfort food! It’s creamy and cheesy deliciousness at its best!
We combine chicken and ham in a rich and creamy sauce, then top it all with Swiss cheese to make this keto chicken cordon bleu casserole! This casserole comes together in under an hour and is absolutely delicious. This dish was a huge hit with my family and is one I’ll make over and over again! Enjoy!
Let’s talk about our chicken and ham!
The combination of chicken with ham in either classic cordon bleu or in a cordon bleu casserole creates an awesome flavor profile! For my chicken, I used a combination of white and dark chicken meat from a whole chicken I’d boiled. You can use all white meat or all dark meat if you’d prefer. I roughly chopped my chicken, but shredded chicken would be a great choice as well. A great time saver for this casserole would be to use rotisserie chicken, then you can choose how much white and dark meat you use. You can also use almost any cooked ham you’d like to make this casserole. You will want to check ingredients and nutritional information when buying ham to ensure there are no added ingredients you don’t want in your ham. There are a few brands of ham which are uncured and are perfect keto ham options.
What other ingredients go into this keto chicken cordon bleu casserole?
We top our chicken and ham with a rich, creamy, and incredibly flavorful sauce. To make our sauce, we start by combining keto mayonnaise and sour cream to create the creamy base for our sauce. I like the Chosen Foods brand avocado oil mayonnaise, but you can use your favorite brand to make this dish. One of the key ingredients we add to our sauce is mustard and I use Dijon mustard for mine. You can use yellow mustard if you’d prefer, or if you’d like could even use spicy brown mustard. A touch of nutmeg is our secret ingredient which makes this sauce extra special. We then add garlic and onion powder, salt, and pepper to complete our sauce. Traditional chicken cordon bleu uses Swiss cheese and that’s what I use to make this casserole. If you’d like, you can substitute with provolone cheese to make your casserole.
What are some ways I can serve this keto chicken cordon bleu casserole?
You have some awesome low carb options for serving this casserole. It’s always a great choice to start your meal with a green salad. A couple of our favorites include Caesar salads and wedge salads. I love making my family a quick and easy salad bar. I start by chopping up some iceberg or romaine lettuce and putting it into a large serving bowl. Then I add some of our favorite salad toppings to smaller serving bowls. These often include blue cheese crumbles or shredded cheese, diced tomatoes, fried and crumbled bacon, hard boiled eggs, sliced avocado or sliced black olives. You can also serve this casserole with some keto biscuits, chaffles, cornbread, or English muffins. Another great choice is to serve this dish with a side of cooked vegetables. Some wonderful low carb options include asparagus, broccoli, Brussels sprouts, cauliflower, green beans, and spinach.
