This keto Italian chicken salad is amazingly creamy, amazingly crunchy, and amazingly delicious! This dish will be a huge hit every time you serve it!
This keto Italian chicken salad is a fresh and amazingly flavorful salad. It’s quick and easy enough to make for everyday meals, and also perfect to serve at parties as an appetizer with raw vegetables or keto crackers. This is one of my favorite chicken salad dishes and I hope you’ll love it as much as I do!
Let’s talk about our main ingredients!
You have some great options for the chicken you use to make this salad. I boiled a whole chicken and used a combination of white and dark meat to make my salad. Alternately, you can use all white meat or all dark meat to make your salad. A wonderful quick and easy option is to use rotisserie chicken to make this salad. Then you can decide how much white and dark meat you add. To our chicken we add diced celery and onions which gives our salad nice crunchy elements. We then add some diced roasted red peppers and chopped black olives to our salad. You can use jarred roasted red peppers or can use homemade roasted red peppers. We have an amazing local market which carries all kinds of peppers, and I actually found some fresh pimento peppers that I roasted up to make my chicken salad.
How do I make the dressing for this keto Italian chicken salad?
The dressing for this chicken salad is amazingly creamy and amazingly delicious. The secret ingredient for this dressing is cream cheese, and adding it results in an amazingly tasty dressing. For the best results, you’ll want to start with softened cream cheese. We also add mayonnaise and heavy whipping cream which results in a creamy dressing with the perfect consistency. I enjoy the Chosen Foods brand avocado oil mayonnaise, but you can use your favorite sugar free mayonnaise to make this salad. For the perfect touch of sweetness, we add some keto brown sugar. Then for seasoning, we add Italian seasoning, garlic powder, salt, and pepper. After adding your dressing to your chicken salad, you can give it a taste and add more salt and pepper or even more keto brown sugar if you’d like!
What are some ways I can serve this keto Italian chicken salad?
You have some awesome low carb options for serving this chicken salad. If you’d like to serve it as a sandwich, you can use keto bread, biscuits, chaffles, or English muffins. I also love serving chicken salad in a lettuce wrap. You can serve this chicken salad as a dip as well. For low carb dippers, raw veggies work great. Some of our favorites include broccoli, cauliflower, celery, cucumbers, mushrooms, radishes, and sliced bell peppers. You can also use cheese whisps, keto crackers, or pork rinds as dippers. I love serving cheese slices and meats such as pepperoni and salami as dippers. A fun change up is to serve this chicken salad with a keto soup to make a delicious soup and salad meal.
