What are the main ingredients in this cheesy beef and cauliflower casserole?
I used 93% lean ground beef to make my casserole, but you can use a fattier mixture if you’d like. You can also use ground turkey to make this dish. I season my ground beef with garlic powder, onion powder, salt, and pepper. For the cauliflower, I used a small head of cauliflower. Alternately, you could use ½ medium head of cauliflower to make this dish. You can boil or steam your cauliflower. If you boil it, you’ll want to drain it well, so you don’t end up with a watery casserole. To make the cheese sauce for our casserole, we combine cream cheese, heavy whipping cream, and shredded Monterey jack cheese. You can use any good melting cheese to make this casserole, but I highly recommend you buy a block of cheese and shred it yourself. It melts the best and contains no unwanted added ingredients.
How do I make the topping for this cheesy beef and cauliflower casserole?
The topping mixture for this casserole is quick and easy to make, but it creates a cheesy topping which is amazingly delicious and which browns up nicely to create a beautiful casserole. We combine eggs, sour cream, heavy whipping cream, and nutmeg for our topping. Nutmeg adds a nice warm element to this dish without being overpowering in flavor. You can use ground nutmeg or can buy whole nutmeg and grate it yourself. When we pour this mixture over our casserole, it tops the casserole, and it gets into the interior of the dish to create an incredibly flavorful and creamy dish. Finally, we top our casserole with even more shredded cheese…because we can and should!🧀Again, you can top your casserole with Monterey jack cheese or with any good melting cheese. Some great options include cheddar, colby, gouda, gruyere, havarti, mozzarella, provolone, or Swiss cheese.

Ingredients
- Avocado oil spray
- 1½ pounds ground beef
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 small head cauliflower, cut into florets
- 4 ounces cream cheese, softened and cubed
- ¾ cups heavy whipping cream, divided
- 2 cups shredded Monterey jack cheese, divided
- 4 eggs, lightly beaten
- ½ cup sour cream
- ¼ teaspoon nutmeg
Instructions
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a large skillet, over medium high heat, add ground beef, garlic powder, onion powder, salt, and pepper. Cook until ground beef is no longer pink. Drain grease and place ground beef into prepared baking dish.
3. While ground beef is cooking, steam cauliflower until fork tender. Add to baking dish and stir to combine with ground beef.
4. In the same large skillet, over medium heat, add cream cheese and ¼ cup heavy whipping cream. Stir and cook until smooth. Add 1 cup shredded cheese and stir until smooth and cheese is melted.
5. Pour sauce over ground beef and cauliflower. Stir to combine.
6. In a small mixing bowl, add eggs, sour cream, and remaining ½ cup heavy whipping cream. Stir or whisk to combine. Pour evenly over ground beef and cauliflower mixture.
7. Top casserole evenly with remaining 1 cup shredded cheese. Bake 40 minutes or until heated through. Let set 5 minutes before serving.
