Ingredients
- Avocado oil spray
- 4 cups chopped cauliflower
- 1 tablespoon butter
- 1 tablespoon diced onion
- 2 tablespoons canned diced jalapenos
- 2 garlic cloves, minced
- 6 ounces cream cheese, softened and cubed
- ⅓ cup chicken broth
- ⅓ cup heavy whipping cream
- ¼ cup sour cream
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 cups shredded mozzarella cheese, divided
- 1½ cups chicken, cooked and shredded
- 4 slices bacon, fried and crumbled
- 1 teaspoon smoked paprika
Instructions
1. Pre-heat oven to 350 degrees. Spray an 11x7 inch baking dish with avocado oil spray.
2. Steam cauliflower until fork tender.
3. In a large skillet, over medium heat, melt butter.
4. Add onions and jalapenos. Saute for 3-4 minutes, or until onions start to soften. Add garlic during last minute.
5. Add cream cheese and cook, stirring frequently, until melted and combined.
6. Add chicken broth, heavy cream, sour cream, salt, and pepper. Stir to combine. Cook for 1-2 minutes, or until smooth and creamy.
7. Add 1½ cups shredded cheese. Stir to combine and cook until cheese is melted.
8. In prepared baking dish, add cauliflower, chicken, and bacon. Stir to combine.
9. Pour cheese sauce over mixture. Stir carefully to completely combine. Top with remaining ½ cup shredded cheese. Sprinkle paprika over casserole.
10. Bake, uncovered, for 30 minutes or until heated through.
