Nuts, in general, are a really good keto food choice. They’re generally low in carbs and high in healthy fats. Cashews and pistachio nuts are higher in carbs that other nuts, so you’ll want to eat them in moderation if you choose to eat them. Other nuts such as almonds, Brazil nuts, hazelnuts, macadamia nuts, peanuts, pecans, and walnuts are relatively similar in their carb counts. Macadamia nuts are higher in their fat content and a great way to add healthy fats to your day. For our clusters, we’re using peanuts. Unlike nuts that grow on trees, peanuts actually grow underground and are technically classified as legumes. They’re a wonderful source of protein and provide us with a source of important vitamins, and minerals. I used salted peanuts to make my clusters, but you can use either salted or unsalted peanuts to make yours.

We combine keto chocolate and keto peanut butter to make an incredibly delicious coating for our clusters. And since we’re using keto chocolate and peanut butter, these clusters are also incredibly low in their carb count. You have some great options for the chocolate you use to make these clusters. I used keto milk chocolate chips to make my clusters, but you can use semi-sweet keto chocolate chips if you’d prefer. There are a number of keto chocolate chip brands you can choose from, but a couple of my favorite brands are Lily’s and Bake Believe. When choosing peanut butter, I always read the nutritional labels. I like to buy peanut butter that contains only peanuts or peanuts and salt. If you’d like, you can substitute with almond butter to make your clusters. When making these clusters, I like to sprinkle coarse salt over some of my clusters.

These clusters are incredibly easy to make, but I do have some tips so yours will turn out perfectly. First, you’ll want to line a couple pans or baking sheets with parchment paper. Alternately, you could use waxed paper. Next, when you melt your chocolate chips and peanut butter together, I recommend microwaving in 30 second intervals and stirring every 30 minutes until your chips are melted and your mixture is smooth. After adding the peanuts, you’ll want to use a spoon or spatula and stir until the peanuts are completely coated in the chocolate mixture. I used a large spoon to make my clusters and ended up with 20 clusters. If using coarse salt, you’ll want to sprinkle a little onto your clusters before chilling them. I like to chill my clusters in the freezer until they’re set, then store them in an airtight container in the refrigerator.

Keto Chocolate Peanut Butter Clusters

Ingredients
- 1½ cups keto milk chocolate chips
- 2 tablespoons keto peanut butter
- 2¼ cups peanuts
- Optional: sprinkle with coarse salt
Instructions
1. Line two 13x9 inch pans with parchment paper. Set aside.
2. In a medium microwave safe mixing bowl, add chocolate chips and peanut butter.
3. Microwave in 30 second intervals, stirring after each interval, until chips are melted and mixture is smooth (approximately 1-1½ minutes total).
4. Add peanuts. Stir until nuts are completely coated with chocolate mixture.
5. Drop by spoonfuls onto prepared pans. Sprinkle with coarse salt if desired.
6. Freeze for 30-45 minutes or until completely set.
7. Serve immediately or store, covered, in the refrigerator until ready to serve.
