I also like to use kitchen scissors to cut raw bacon, then saute it in a pan and save the bacon grease to add to all kinds of dishes.

To our bacon, we start by adding chopped lettuce and chopped tomatoes. I love iceberg lettuce and find it adds amazing crispiness to this dish. If you’d like, you can use romaine lettuce. For the tomatoes, I used 4 medium Roma tomatoes which comes out to approximately 1 pound of tomatoes. You can also use vine ripened tomatoes if you’d prefer. Another fun option is to use halved cherry or grape tomatoes. For your mayonnaise, you’ll want to make sure it doesn’t contain any added sugar or oils you don’t want. You can also use homemade mayonnaise, which is easy to make and absolutely delicious! Although not a traditional BLT ingredient, I like to add a little fresh lime juice to this dish. You can also use bottled lime juice. Last, I recommend you give this salsa dip a taste and add some salt and pepper if you’d like.

You have some awesome low carb options for serving this dish. You can use your favorite keto chips or crackers as dippers. Another great choice is to use low carb raw vegetables for dippers. Some good options include broccoli, cauliflower, celery, cucumbers, radishes, and sliced bell peppers. Carrots are a bit higher in carbs, but when eaten in moderation, they’re also a great choice. A fun option is to use sliced cheese or meats such as pepperoni and salami as dippers. This mixture can also be used as a filling for lettuce wraps and served as a light main dish. Since it contains lettuce, you could also serve it as a fun side salad. You could add a keto soup and have an amazing soup and salad meal! To this you could also add some keto biscuits, cornbread, or English muffins!

- 2 cups chopped iceberg lettuce
