Let’s talk about strawberries!
When following a keto plan, most fruits are too high in carbs to be included. The great news is that most berries, when consumed in moderation, are a wonderful keto choice. One cup of strawberries contains only 7-8 net grams of carbs. Strawberries are delicious simply eaten raw. You can also use them to make dishes such as cheesecake stuffed strawberries and strawberry mousse. My husband loves it when I slice strawberries, stir in some keto sugar, then refrigerate until it’s time to top his ice cream with these strawberries! You can also top keto brownies, cheesecakes, pancakes, and chaffles with strawberries. I enjoy cooking strawberries to make jams and sauces. For our preserves, we’re chopping our strawberries, then boiling them for 5 minutes with lemon juice and water. This helps to create the perfect consistency for our preserves.

What other ingredients go into our keto fresh strawberry preserves?
To make these preserves, we add just a few simple ingredients to our strawberries. If you haven’t worked with gelatin powder, no worries! We simply sprinkle the powder over the cold water, stir, then allow it to set for 5 minutes. This is called “blooming” the gelatin and I do this step while my strawberries are on the stove cooking. I’m a big fan of Swerve sugar, but for certain recipes I use allulose. This is because allulose doesn’t crystallize in recipes such as these preserves, and Swerve tends to do so.. Swerve is comparable in its sweetness level to regular sugar, but allulose isn’t quite as sweet so we do have to add more of it more to dishes. Our last ingredient is vanilla extract which adds awesome flavor and works to bring out the other flavors in these preserves.

What are some ways I can serve these keto fresh strawberry preserves?
You have some awesome low carb options for serving these preserves! A great appetizer idea is to top a block of softened cream cheese with some of these preserves. You can also top this appetizer with keto candied nuts if you’d like! You could serve these preserves with keto crackers as well. For breakfast, these preserves are a perfect topping for keto pancakes and waffles. All kinds of keto desserts including brownies, cheesecakes, and ice cream can also be topped with some of these strawberry preserves. You can make a fun snack by simply combining keto Greek yogurt with these preserves and perhaps with some keto granola. These preserves can also be added to small jars to make a perfect food gift for family and friends. One of my favorite options is to serve these preserves as a topping for keto biscuits, chaffles, cornbread, or English muffins.

Keto Fresh Strawberry Preserves
Keto fresh strawberry preserves are delightfully delicious, combining the perfect balance of sweet and fruity flavors!
Ingredients
- 16 ounces fresh strawberries, hulled and finely chopped
- 2 tablespoons lemon juice
- 1 tablespoon water
- 2½ tablespoons cold water
- 1½ teaspoons unflavored gelatin powder
- ⅔ cup allulose
- 1 teaspoon vanilla
Instructions
1. Add strawberries, lemon juice, and water to a medium saucepan. Over high heat, bring to a boil.
2. Boil for 5 minutes, stirring occasionally. Remove from heat.
3. While berries are cooking, in a small bowl, sprinkle gelatin powder over cold water. Stir to combine. Let set 5 minutes.
4. Add gelatin and water mixture, allulose, and vanilla to cooked strawberries. Stir to combine ingredients.
5. Pour mixture into a mason jar. Cover and refrigerate until ready to serve.
Notes
*Allulose is subtracted from the carbs making it a zero net carb ingredient.
