Since my husband is a big fan of strawberries, I’m always thinking up new recipes for them, and this easy keto strawberry milkshake was a big hit! You can make this drink as sweet as you’d like. And since it only takes minutes to make, you can enjoy it on even your busiest of days!

Most fruits are too high in carbs to eat on a keto plan, but the great news is that most berries, including strawberries, are a wonderful keto option. One cup of strawberries contains about 7-8 net grams of carbs. In comparison, one cup of blackberries contains about 6 net grams, and one cup of raspberries comes in at about 7 net grams of carbs. While still acceptable when eaten in moderation, one cup of blueberries contains about 17-18 net grams of carbs. Strawberries are delicious eaten raw, just as they are. They can also be diced or sliced and tossed with some keto sugar. This makes a great topping for keto desserts. They’re also great cooked or roasted then used to make jams, jellies, and sauces. For this milkshake, we’re simply hulling our strawberries then tossing them into a blender along with all of our other ingredients.

Our base to make this drink is a combination of unsweetened coconut milk and heavy whipping cream. For the coconut milk, you’ll want to make sure you’re using the kind in a carton and not the kind in a can. Also, you’ll want to make sure you’re using unsweetened coconut milk, and check your ingredients to ensure there’s no added sugar or other ingredients you don’t want. The addition of heavy whipping cream adds amazing richness to our drink without adding too many additional carbs. For the sweetener, I used the Swerve brand of powdered sugar. It is amazingly similar in its sweetness level to regular powdered sugar, yet it contains zero calories and zero net carbs. You can add even more sugar than the recipe calls for if you’d like a sweeter drink. The addition of a little vanilla extract and salt enhances the flavor to our milkshake.

What are some ways I can serve this easy keto strawberry milkshake?
You have some awesome options for serving this milkshake! It’s perfect served just as is! If you’d like to serve it immediately, I recommend using chilled coconut milk or adding some ice to your blender. You can also make this milkshake ahead of time and refrigerate until ready to serve. A fun option is to top your milkshake with homemade keto whipped cream, which is incredibly easy to make! For the best results, I recommend chilling your bowl and beaters in the freezer for 15-20 minutes before using. Then to your chilled bowl you’ll add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. You’ll beat this mixture until stiff peaks form. Stiff peaks mean when you remove your beaters, they form peaks which completely hold their shape. You can give your whipped cream a taste and add even more powdered sugar.
