Ingredients
- 2 cups almond flour
- 2 teaspoons baking powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
- 1 cup cottage cheese
- 2 eggs
- 1 cup shredded cheddar or colby jack cheese
Instructions
1. Pre-heat oven to 350 degrees. Line a baking sheet with parchment paper.
2. In a large mixing bowl add almond flour, baking powder, garlic powder, and salt. Stir to combine and set aside.
3. Add cottage cheese to a blender. Blend until smooth. Add eggs and blend until combined.
4. Add blender mixture to dry ingredients and stir to combine. Add shredded cheese and stir to combine.
5. Drop by spoonfuls onto prepared baking sheet into 12 even sized rounds.
6. Bake 20-23 minutes, until nicely browned and inserted toothpick comes out clean. Batter will spread, so let buns cool slightly before cutting apart and serving. Refrigerate leftovers.
