Instant Pot Keto Hungarian Chicken

Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 4 pounds bone-in chicken thighs (8 thighs)
- 2 tablespoons diced onions
- 3 garlic cloves, minced
- 2 teaspoons Hungarian sweet paprika
- 1 teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1½ cups chicken broth
- ½ cup chopped tomatoes
- 1 teaspoon xanthan gum
- ½ cup sour cream
- 2 tablespoons heavy whipping cream
- Optional topping: parsley
Instructions
1. Turn instant pot on to saute. Add olive oil and butter.
2. Saute chicken thighs for 2 minutes. Flip and saute other side another 2 minutes. Work in batches. Remove chicken and set aside.
3. Add diced onions to instant pot. Saute until soft, about 2-3 minutes. Add garlic during last 30 seconds.
4. Turn instant pot off. Add Hungarian paprika, smoked paprika, salt, pepper, and chicken broth. Stir to mix ingredients.
5. Add chicken back to instant pot. Top with chopped tomatoes.
6. Set instant pot to manual high and pressure cook for 15 minutes. Natural release for 15 minutes.
7. Remove chicken from instant pot and set aside. Turn instant pot to saute and add xanthan gum. Whisk to combine. Add sour cream and heavy whipping cream. Saute, stirring frequently, for 1-2 minutes or until mixture has thickened.
8. At this point, you can either plate chicken and pour sauce over chicken or you can add chicken back to instant pot to coat completely with sauce.
9. Once plated, sprinkle parsley over chicken if desired.
10. Store leftovers in a covered container in the refrigerator.
