The ingredients for this salad are fresh, delicious, low carb, and keto. I only added one tablespoon of red onion. It gives the salad extra flavor without adding too many carbs. When using raw onions that will not be cooked, I often start by soaking them in water for about 5 minutes. Then drain the water and they’re ready to be added. This step takes the bite out of the onions. I love avocados!🥑They are a great keto food choice. Technically, avocados are fruits. Haha! There is your second fun fact for the day! Avocados are loaded with good fat, fiber, vitamins and minerals. Tomatoes are a low calorie and low-fat food. They contain numerous vitamins and minerals as well. I chose feta for this salad because it’s creamy and mild and complements the other ingredients without overpowering them in any way.

Ingredients
For the vinaigrette dressing:
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- ¼ teaspoon Dijon mustard
- ⅛ teaspoon garlic powder
- ⅛ teaspoon oregano
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
For the salad:
- 1 tablespoon red onion, diced
- 2 avocados, diced
- 1 Roma tomato, chopped
- ¼ cup crumbled feta cheese
Instructions
For the vinaigrette dressing:
1. In a small mixing bowl, add all ingredients. Whisk to combine. Set aside.
For the salad:
1. In a small bowl, place the red onion. Cover with water and set aside for 5 minutes.
2. Dice avocados and tomato. Place in a medium mixing bowl.
3. Once red onion has set for 5 minutes, drain water and add onions to avocados and tomatoes.
4. Drizzle dressing over salad. Stir to combine.
5. Sprinkle feta over salad. Stir gently to combine.
6. Serve immediately.
