Fresh ingredients make this creamy keto cilantro lime coleslaw shine!
I love the ease of using coleslaw mixes. Mine contained shredded green and red cabbage and carrots. It’s just such a pretty combination. You can always choose to shred your own cabbage and carrots if you’d like. Some red onion, diced jalapenos, and garlic are added to make this a beautiful and flavorful salad! Fresh cilantro is one of the stars of this dish. One year for Christmas, my husband bought me a pair of herb scissors that I’d put on my Christmas list. I love them and they save a lot of time when chopping fresh herbs. You can check them out here!
Let’s talk about the dressing for creamy coleslaw!
There is just something comforting about adding a creamy dressing to coleslaw. This dressing combines keto mayonnaise and sour cream. These two work so well together and I also use them as the base for many of my homemade dips and dressings. Fresh lime juice gives this dressing just the right amount of zesty flavor and pairs perfectly with the cilantro. The flavor of this dressing is then enhanced by adding chili powder, salt, pepper, and smoked paprika.
Here are a few tips for making this creamy keto cilantro lime coleslaw!
You will want to cut or tear up any large pieces of cabbage in your mix to make them all uniform in size. I suggest using fresh lime juice for this recipe. In a pinch, you can use bottled. I like to use fresh jalapeno for my recipes; but I’ll use canned if I don’t have fresh on hand. This is a medium spice dish. If you’d like it spicier, you could add more jalapenos or more chili powder. You’ll have the best flavor and texture for this coleslaw if you refrigerate it for 2-4 hours before serving.
