Ingredients
- Avocado oil spray
- 1 tablespoon butter
- 2 tablespoons diced green peppers
- 2 tablespoons diced onion
- 2 tablespoons diced red peppers
- 14 eggs
- ½ cup heavy whipping cream
- ¼ cup sour cream
- 1 teaspoon dry mustard
- ½ teaspoon salt
- ½ teaspoon smoked paprika
- ½ teaspoon pepper
- 2 cups diced cooked ham
- 2½ cups shredded cheddar cheese, divided
- Additional sour cream for serving, optional
Instructions
1. Pre-heat oven to 350 degrees.
2. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
3. In a small skillet, over medium heat, saute peppers and onion in butter for 4-5 minutes, or until vegetables start to soften. Set aside.
4. In a large mixing bowl, add eggs. Whisk until smooth. Add heavy cream, sour cream, dry mustard, salt, smoked paprika, and pepper. Whisk until smooth and combined.
5. Add peppers and onions to egg mixture. Then add ham and 2 cups of shredded cheddar cheese to egg mixture. Whisk to combine,
6. Pour egg mixture into prepared baking dish. Top with remaining ½ cup of shredded cheddar cheese.
7. Bake, uncovered, for 50-60 minutes, or until knife inserted comes out clean.
8. Serve with additional sour cream if desired.
Notes
If you're using ham packaged in water, you’ll want your ham as dry
as possible to avoid having a watery casserole. You can use paper towels to press out the extra moisture from the ham.
