There are a couple of keto root beer brands I would recommend. For this recipe I used Virgil’s zero sugar root beer. Virgil’s contains a sweetener blend containing erythritol, stevia leaf extract, and monk fruit extract. It is a zero calorie and zero carb drink. And it tastes really good! You could also use Zevia soda. They make a ginger root beer made with stevia leaf extract. It is also a zero calorie and zero carb drink. Zevia also makes a flavor called Mountain Zevia which tastes like Mountain Dew! But I digress!
What are some ways I can serve this keto root beer BBQ pulled pork?
There are some awesome keto options for serving this pulled pork! You could always serve it in a bowl as is. Another great option is to serve this pulled pork alongside or atop a green salad. It would work great with a lettuce or spinach salad. This pulled pork is juicy and you don’t even need to add a salad dressing. But you could serve it with a drizzle of ranch or blue cheese dressing if you’d like. Another fun option would be to mix some sour cream with some keto barbecue sauce and use this for your dressing. This pulled pork is great in a sandwich. You can use lettuce to make a lettuce wrap or you can use your favorite keto bread. There are a few things you can do to ensure this recipe comes out perfectly. I used a bone-in pork shoulder roast. You can use a boneless roast or even a pork tenderloin for this recipe. It’s all good when it comes out of the oven! I recommend removing any large sections of fat from your pork, but leaving a little fat on it. This will give your meat extra flavor. Next, save all the liquid you drain from your pork. Depending on the size of your roast and how juicy you want it, you can choose to use more or less reserved liquid. You can always use any extra drippings to make a keto gravy or even homemade bone broth! Last, I used my homemade barbecue sauce recipe; but you can use any keto barbecue sauce you’d like.

Keto Root Beer BBQ Pulled Pork
This keto root beer BBQ pulled pork is moist, tender, and absolutely delicious! You’ll never look at pulled pork the same after you taste this!
Ingredients
- 2 tablespoons avocado oil
- 6-7 pound bone-in pork shoulder roast
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 can keto root beer
- 2 cups keto barbecue sauce
Instructions
1. Pre-heat oven to 350 degrees.
2. In a large stockpot, heat avocado oil over medium high heat.
3. Cut roast into pieces. Trim any large sections of fat from pork. Season pieces with salt and pepper.
4. Saute pork until seared and browned on all sides. Work in batches. Place browned pork pieces in a deep dish 13x9 inch baking dish.
5. When all pork is browned, pour root beer over pork. Cover with aluminum foil.
6. Bake at 350 degrees for one hour. Reduce heat to 300 degrees and bake for two additional hours or until pork is cooked through and tender.
7. Drain liquid from pork, reserving all liquid. Let set for at least 5 minutes. Then skim fat off liquid.
8. Using two forks, shred all of pork and place back into baking pan. Add 1 cup of reserved liquid and 2 cups of barbecue sauce to shredded pork. Stir to completely coat pork in sauce.
9. Serve immediately. Store leftovers in a covered container in the refrigerator.
