In just 35 minutes, you can make this amazingly delicious keto pumpkin butter! It is so rich and decadent, no one will ever guess it’s also low carb!
Oh man! This keto pumpkin butter is terrific. My whole family loved this recipe. I know I’ll be making it for them often and I hope you will enjoy it as much as we do! With just 8 ingredients, 5 minutes of prep time, and 30 minutes of cooking time, you’ll be amazed at the depth of flavor in this pumpkin butter. And one serving of this delicious mixture comes in at just 1.5 grams of net carbs!
Let’s talk about the ingredients for this keto pumpkin butter!
I use canned pumpkin for my pumpkin recipes. Just make sure you buy canned pumpkin that has pumpkin as the only ingredient. Some brands call it pumpkin puree while others say 100% pumpkin. Make sure you don’t use pumpkin pie filling as it contains sugar and has a high carb count. My choice for keto sugar is the brand Swerve. It contains zero calories and zero net carbs. It’s also delicious! I love using fresh lemon juice in my recipes and always try to have a couple lemons hanging out in a bowl on my counter ready to use. In a pinch, you can always use bottled lemon juice. A little vanilla adds an extra layer of flavor.
I found the perfect spice mixture for my family’s taste was the combination of pumpkin pie spice with the addition of some extra cinnamon. Just a pinch of salt nicely enhances the flavors of the pumpkin butter. I found 1/3 cup of water brought about the perfect consistency for this dish. If you’d like a mixture that is thinner, you can simply add a little more water.
Is there anything I should know about making this recipe?
This is a quick, easy, and delicious recipe! There are a few things you can do to ensure you get perfect results. First, initially stir your mixture until all the ingredients are completely combined. Then heat your mixture over medium heat, just until it starts to bubble. I decreased my heat to medium low and cooked my pumpkin butter for 30 minutes, stirring occasionally. Depending on your stove, you may have to decrease your heat a bit more if your mixture starts to bubble a lot. You just want it to slowly simmer. Last, if your pumpkin butter starts to get thicker than you’d like, add one tablespoon of water at a time until you reach your desired consistency.
How can I serve this keto pumpkin butter?
There are numerous ways you can serve this pumpkin butter. You can top your favorite keto bread or English muffins with it. It could be used to make an awesome keto pumpkin pie spice latte.☕ You could top your favorite keto ice cream, pancakes, or waffles with it. It can also be added into any number of savory dishes to turn them into a pumpkin dream come true! I’m thinking of a keto shirataki noodle with creamed pumpkin sage butter dish….recipe to follow soon!😊 Let your imagination run wild with it and have fun!
