These keto mashed turnips with celery root are creamy, delicious, and low carb. I’ve made mashed turnips before and I’ve cooked with celery root. Combining the two into a mashed vegetable dish far exceeded my expectations. I love this dish and hope you and your family enjoy it as well!
Let’s first talk about turnips!
Turnips are a wonderful keto option. They aren’t the lowest carb vegetable option; but are an excellent choice when used in moderation! Turnips are low calorie and provide some important nutritional benefits. These pretty purple and white vegetables are a good source of both vitamin C and of fiber. One serving of turnips contains just 7 net grams of carbs. So, again, enjoyed in moderation, they are a great keto option. Turnips can have a slightly mild bitter taste. Smaller turnips tend to be less bitter. When preparing turnips, it’s good to know that turnips are harder and have a thicker skin than potatoes. So be careful when cutting them!
Let’s talk about the celery root in these keto mashed turnips with celery root!
Celery root, also known as celeriac, is a root vegetable and is a great option to add to many dishes as it creates a distinct and delicious flavor! The flavor of celery root is earthy and a bit nutty. It isn’t the prettiest of vegetables, but it delivers some awesome flavor! When preparing celery root, make sure you peel it completely. Then simply chop it into the same size pieces as the turnips and boil until tender along with your turnips!
Do you have any tips for making these keto mashed turnips with celery root?
There are a few key things you can do to ensure your dish comes out perfectly! First, make sure you cook your turnips and celery root until they’re very tender. This will make mashing them much easier. I live at an elevation of about 7350 feet, so my vegetables often take longer to make. I boiled my turnips and celery root for about 45 minutes. Yours may not take as long. Next, an important thing to know about turnips is that if you don’t drain them well, you’ll end up with a watery mixture.
You can beat or mash your turnips for as long as needed to make them creamy. Potatoes become gummy when over mashed because of the starch released when mashing. This won’t happen with your turnips and celery root! Last, you can either use a potato masher or an electric mixer for this recipe. You can beat the mixture until smooth or you can leave some larger pieces to have a more rustic dish!
