This Mexican keto chicken salad will add an awesome kick to your meal! It is creamy, spicy, delicious, and low carb!
My family loves chicken salad, and they loved this Mexican keto chicken salad version! It is a quick and easy recipe that has incredible flavor. You can also easily change it up, if you’d like, to increase the heat level to your desired spice level!
Let’s talk about some of the ingredients in this Mexican keto chicken salad!
I had cooked a whole chicken and had some leftover chicken, so this is what I used. I used a combination of white and dark meat. You can use all white meat, all dark meat, or a combination of both. If you’d like an easy option, a rotisserie chicken would work perfectly for this dish. Next, I chose to use canned diced green chilies as they are mildly spicy and that is what my family prefers. This recipe calls for red onion and red pepper. You could use a white or yellow onion if you’d like. You can use any color of bell pepper as well.
For the dressing, we combine keto mayonnaise with sour cream. I love this combination for dressings. A couple of tablespoons of lime juice adds just the right amount of acidity. I love using fresh lime juice, but you can use bottled in a pinch. The spices used in this recipe are simple, yet help to create an awesome depth of flavor. Chili powder, cumin, salt, and pepper are all that is needed to complete this dressing!
How can I adjust the heat level in this Mexican keto chicken salad?
This chicken salad has a mild to medium spice level. If you’d like it spicier, there are a few simple things you can do to accomplish that. First, you could use canned jalapenos instead of green chilies. If you want it even hotter, use fresh jalapenos! If you prefer a pepper hotter than a jalapeno, go for it! Next, you can increase the amount of chili powder in this recipe to increase the heat level. If you want to take the heat level up even a notch more, you could add some cayenne pepper. Last, increasing the cumin will give you a little increase in the spice level!
Do you have any suggestions for serving this chicken salad?
This salad is awesome served all by itself in a big bowl! You could also add it to your favorite greens to make a tasty main dish salad. One of my favorite serving options is to make a sandwich with chicken salad. You can serve this in a lettuce wrap or with your favorite keto bread. I love making 90 second keto English muffins for this chicken salad. Top your salad or sandwich with your favorite low carb toppings and enjoy!
