Ingredients
- 8 ounces cream cheese, softened
- ½ cup (1 stick) butter, softened
- ¾ cup powdered sugar substitute (Swerve)
- ½ teaspoon peppermint extract
- ½ teaspoon vanilla extract
- 4-5 drops green food coloring, optional
- ¼ cup chopped keto semi-sweet chocolate
Instructions
1. Prepare 2 baking pans, 13x9 inches each, by lining the bottoms with parchment paper. Set aside.
2. In a medium mixing bowl, place softened cream cheese and butter. Use an electric mixer to beat until combined.
3. Add powdered sugar, peppermint and vanilla extracts. Beat until ingredients are combined and mixture is smooth, using a spatula to scrape sides and bottom of bowl if necessary. Add green food coloring, if desired, and beat until combined.
4. Add chopped chocolate and beat until just combined.
5. Drop by spoonfuls onto parchment lined pans or use a piping bag to pipe mixture into even mounds onto prepared pans.
6. Freeze for 1 hour before serving.
