Herbs, seasonings, and diced vegetables are often added for the flavor and texture they bring. Then binding agents and some liquid are added to keep the meatloaf moist and to keep it from falling apart. And finally, meatloaf is often topped with a sauce or glaze. Meatloaf can be made in a loaf pan or made free form on a baking sheet or pan.

There are several ingredients in this recipe that make it moist and delicious while also helping to keep it low carb. We substitute crushed cheese whisps, crushed pork rinds, and grated parmesan cheese as our binding ingredients.
The addition of salsa and heavy cream help to keep this meatloaf incredibly juicy and moist. They are also both low in carbs! While there are many sweet meatloaf glazes that can be made keto and low carb, I love the more savory option of simply topping this meatloaf with keto ketchup. It is important to mix your ingredients together, but don’t overmix. This will help ensure you don’t end up with a tough meatloaf. You can make your meatloaf free form, as I’ve done here. You can also make it in a loaf pan. Just make sure your meatloaf measures 160 degrees before you remove it from the oven. Last, you’ll want to let your meatloaf rest for 5-10 minutes before serving. If you can wait that long, go for the 10 minutes to help ensure your meatloaf holds together when you cut it!

Family Favorite Keto Meatloaf
This is our family favorite keto meatloaf! It is a delicious, easy, and low carb meatloaf recipe. I hope you’ll love this comfort food dish as much as we do!
Ingredients
- 1 tablespoon olive oil
- 3 tablespoons diced onion
- 1½ pounds ground beef
- ⅓ cup crushed cheese whisps
- ⅓ cup crushed pork rinds
- ⅓ cup grated parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 3 tablespoons fresh parsley
- 1 egg, lightly beaten
- ⅓ cup salsa
- ¼ cup heavy whipping cream
- ½ cup keto ketchup
Instructions
1. Pre-heat oven to 350 degrees. Line a 13x9 inch baking pan with aluminum foil. Set aside.
2. In a small skillet, over medium heat, add oil. Once oil is hot, add onions. Cook, stirring frequently, until onions are softened, 4-5 minutes.
3. In a large mixing bowl, add onions and all remaining ingredients, except ketchup.
4. Use your hands to combine all ingredients. Don’t over work mixture.
5. Place meatloaf mixture onto prepared pan. Press mixture to form a round loaf shape.
6. Bake for 4O minutes, or until meatloaf reaches 140-145 degrees. Remove meatloaf from oven. Drain fat from pan if desired. Spread ketchup evenly over meatloaf. Return to oven and bake for an additional 15-20 minutes or until meatloaf reaches 160 degrees.
7. Let meatloaf set for 5-10 minutes before serving.
8. Store leftovers, in a covered container, in the refrigerator.
