Let’s talk about chorizo!
There are two main types of chorizo, Spanish and Mexican. Spanish chorizo is a cured and dried sausage. It is cooked and ready to eat. Mexican chorizo is a raw ground meat mixture that needs to be cooked. You can fry it up in a skillet as you would with ground beef. Both types are typically made with pork, although you may find some made with other meats. Both have an incredibly rich red color which comes from the added seasonings. Today, we’re making Mexican chorizo using ground pork.
What other ingredients go into this homemade Mexican chorizo?
First, we add some apple cider vinegar to our ground pork. This helps to give the meat the best crumbly texture. You can substitute red wine vinegar if you’d like. Then we add both ancho chili powder and chili powder. We then add cumin, smoked paprika, garlic powder, salt, cinnamon, coriander, oregano, pepper, and cloves. This mixture smells as good as it tastes! I also love the red color and the deep flavor this chorizo gets from the chili powders and smoked paprika. If you can’t find ancho chili powder, you can add either more chili powder or more smoked paprika. You’ll want to mix your seasonings together in a bowl before adding to your meat. Then mix well so the seasonings get distributed evenly throughout the meat.
How can I serve this homemade Mexican chorizo?
One of the classic ways to use this chorizo is to cook it and add it to scrambled eggs. But there are so many other ways you can use this chorizo. You can add it to your omelets, frittatas, or quiches. It can also be used to make breakfast patties. Chorizo makes for an awesome keto taco or in a taco salad! It works great as an addition to your favorite queso dip. You can combine this chorizo with some ground beef or turkey to make meatballs or meatloaf. It can also be added to casseroles, soups, stews, and even vegetables. If you use it in any other way, I’d love to hear how it turns out!
