Let’s talk about little smokies!
There are many brands of little smokies. Each brand varies in both their ingredients and carb counts. I carefully check my nutrition labels and pay attention to all ingredients and to the carb counts of the things I choose to buy. When looking at brands of little smokies, I found net carb counts per serving ranging from zero to 6 depending on the brand. When checking ingredients, some were made primarily with pork and some were mainly made with beef. Still others contained a combination of pork and beef. Some brands added corn syrup, dextrose, food starch, and something called separated chicken.😂 You can use whatever brand you like. Just an FYI: this recipe and the nutritional information provided here is for the brand Fork in the Road and what they call, “little goodies,” instead of calling them little smokies.
What other ingredients go into these keto blueberry chipotle little smokies?
The sauce for these little smokies produces the perfect combination of sweet, spicy, and tang. The tang comes from the tomato paste, lemon juice, and apple cider vinegar. We add some sweetness with our keto brown sugar which balances the tang and heat of this sauce. The salt and smoked paprika bring awesome flavor to the sauce. Then the blueberries give a little tang and sweetness to our sauce. The heat for this sauce comes with the addition of the chipotle pepper in its sauce. This sauce is an awesome choice for little smokies, but it would work well with other meats and sausages as well.
Can these keto blueberry chipotle little smokies be made in the crockpot?
You can absolutely make these little beauties in the crockpot. This is a great option for parties and get togethers. The crockpot does the work and gives you some extra time to do other things. To make this in the crockpot, place your little smokies in the crockpot. Make your sauce up to the point where the sauce comes to a boil and you crush your blueberries. Then pour the sauce over the little smokies and stir to cover the little smokies in the sauce. Cover and cook until heated through. You can cook these on high for 1-2 hours or on low for 2-3 hours.
