How do I make keto sweetened condensed milk?
It is incredibly easy to make your own keto sweetened condensed milk. We are using heavy whipping cream instead of milk to keep the carb count low. Then we’re adding keto sugar. I used Swerve granulated sugar which contains zero calories and zero net carbs. It is also delicious. You simply add 2 cups of heavy whipping cream with ¾ cup granulated keto sugar in a medium saucepan. Heat, over medium heat, whisking every few minutes. When the mixture starts to bubble at the sides of your pan, decrease your heat to medium low. Then continue to simmer, whisking every few minutes, for 30-35 minutes at which point your mixture with start to thicken.
Remove from heat and stir in 4 tablespoons of butter and 1 teaspoon of vanilla. Your mixture will thicken further while cooling. You can store your sweetened condensed milk in a covered container in the refrigerator and it will be ready when you want to use it. What kind of peanut butter should I use for this keto peanut butter fudge?
Many peanut butters contain ingredients which aren’t keto. Some add sugar and oils you don’t want in your peanut butter. But there are quite a few brands that make peanut butter containing only peanuts. Some are salted and some are unsalted. So, check your nutrition labels closely and look for a peanut butter made simply with peanuts and, if you’d like, salt!

This is a fun and easy recipe to make, but there are a few things you can do to ensure it comes out perfectly every time. First, I recommend lining your pan, to cover the bottom and up the sides, with parchment paper. You can then simply lift your fudge out of the pan to cut it. It also makes clean up a breeze! Next, microwave in 30 second intervals, stirring after each interval. You want your peanut butter melted and your mixture smooth and combined. My fudge took 2 minutes total. Last, you’ll want to cover your fudge and refrigerate it for 2 hours or overnight, to allow it to set, before serving.

Ingredients
- 1½ cups keto sweetened condensed milk *(see notes for recipe link)*
- 1¼ cups keto peanut butter
Instructions
1. Line an 8x8 inch pan with parchment paper to cover bottom and up sides of pan.
2. In a medium sized microwave safe bowl, place sweetened condensed milk and peanut butter.
3. Microwave for 30 seconds and stir mixture. Repeat microwaving and stirring at 30 second intervals until peanut butter is melted and mixture is combined and smooth, 2-2½ minutes total.
4. Pour mixture into prepared pan and refrigerate for 2 hours or overnight before serving.
5. Store, in a covered container, in the refrigerator.
