Let’s talk about coconut!
We are using unsweetened coconut for these treats. Sweetened coconut contains some additives that aren’t keto. Typically, there is added sugar, propylene glycol, and sodium metabisulfite. But, thankfully, there are many brands of unsweetened coconut that contain just one beautiful ingredient….coconut! It’s interesting to know that unsweetened coconut has more calories and fat than sweetened coconut. This is because the sweetened coconut has a higher water content. But our unsweetened coconut is much lower in carbs! Don’t worry, we add some moisture and the perfect amount of sweetness to our treats; and each one comes in at just 1 net gram of carbs!
What is the best chocolate to use for these keto coconut pecan treats?
I used Lily’s milk chocolate chips for these fun treats. These chips are sweetened with erythritol and stevia and they are delicious. You can use any type of keto milk chocolate you’d like. If you want your treats a little less sweet, you can also use semi-sweet chocolate chips. And, if you’d like, you could even use dark chocolate chips. Lily’s makes all of these.
Are these keto coconut pecan treats difficult to make?
These fun treats are not difficult to make, but I do have a few tips so yours will turn out perfectly every time! First, since we’re using unsweetened coconut, I chose to rehydrate them a bit. You don’t have to do this with every recipe calling for unsweetened coconut; but I find it important for this dish. Next, add your powdered sugar and stir well to combine the sugar with the coconut. After you add your melted coconut oil, vanilla, and salt, you’ll want to stir your mixture until it forms a dough. I then divide my dough into 4 big even sized balls. Then I make 5 small balls out of each to come up with 20 treats. This helps to keep your treats similar in size.
Next, press your pecan into the coconut balls. The sides of the balls may crack a bit when you do this. No worries, you can either leave them be or you can use your hands to fix the cracks.😉You have a couple good options for drizzling your melted chocolate over your treats. You can dip a fork into the chocolate and use it to drizzle your chocolate, or you can use a small plastic bag. Simply place your melted chocolate into the bag. Then press the chocolate down and into one of the bottom corners. You only want to make a small hole in the corner for this. I use a toothpick to poke a hole in my bag. This makes the process go quickly and you get a more even drizzle! Last, chill your treats in the refrigerator for about an hour, or until the chocolate sets, before serving.

Keto Coconut Pecan Treats

Ingredients
- 2 cups unsweetened shredded coconut
- ¼ cup hot water
- 2¼ cups powdered sugar substitute (Swerve)
- ⅓ cup coconut oil, melted
- 1 teaspoon vanilla
- ½ teaspoon salt
- 20 pecan halves
- ⅓ cup keto milk chocolate chips
Instructions
1. Line a baking sheet with parchment paper. Set aside.
2. In a large mixing bowl, add unsweetened coconut. Pour hot water over coconut and stir to combine. Let set for 10 minutes.
3. Add powdered sugar and stir well to combine.
4. Add coconut oil, vanilla, and salt. Stir until mixture is completely combined.
5. Roll into 20 balls. Place onto prepared baking sheet.
6. Firmly press a pecan half into the center of each ball.
7. In a small microwave safe bowl, add chocolate chips. Melt in microwave, heating in 30 second intervals, stirring after each interval, until chocolate is melted and mixture is smooth.
8. Drizzle chocolate evenly over coconut treats. Chill, in the refrigerator for 1 hour or until chocolate is set before serving.
9. Store leftovers, in a covered container, in the refrigerator.
