We have an awesome combination of vegetables in this soup. Red peppers and onions are sauteed at the start of this recipe. Then we add broccoli and cauliflower which will cook in our delicious broth. For my ham, I used some leftover ham from a bone-in ham I’d made earlier in the week. Our soup gets some awesome flavor from the combination of beef broth and diced tomatoes. Because our soup ingredients provide a great depth of flavors, we only add parsley, garlic powder, and pepper as additional seasonings. I added a little xanthan gum to thicken up our soup a bit. You can omit this, but your soup won’t be quite as thick. It will still taste awesome though.😉You can also sprinkle your soup with some freshly chopped parsley for a pretty presentation.

Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 cup diced red peppers
- ¼ cup diced onion
- ½ large cabbage, chopped (about 6 cups)
- 6 cups beef broth
- 2 cups water
- 1 (28 ounce) can diced tomatoes
- 4 cups diced cooked ham
- 1 cup chopped broccoli
- 1 cup chopped cauliflower
- ¼ cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon pepper
- 1 teaspoon xanthan gum
Instructions
1. In a large stockpot, over medium high heat, add butter and olive oil.
2. Once butter is melted, add peppers and onion. Saute, stirring frequently, until vegetables start to soften, 4-5 minutes.
3. Add cabbage, beef broth, water, diced tomatoes, ham, broccoli, cauliflower, parsley, garlic powder, and pepper. Stir to combine ingredients.
4. Increase heat to high and bring soup to a boil. Decrease heat to medium high and simmer for 20-25 minutes, or until vegetables are tender.
5. Sprinkle xanthan gum over soup. Stir and simmer until soup thickens, 3-4 minutes.

I used left over bone in spiral ham and therefore did not add any spices. I also didnt add cauliflower or broccoli but used a full head of cabbage. It is delicious and I’ve stored some in containers for some upcoming cold nights!

I ended up making this with some leftover kielbasa and turkey bacon. Doubled most ingredients so nw have 17 cups or a little over 4 litres. My neighbour’s bringing containers. As we are in the middle of a huge snow storm, I anticipate pure deliciousness.
