This keto strawberry sherbet is a refreshing low carb treat! Sometimes I make up a recipe and it turns into something other than I intended. That’s what happened with this recipe. I was attempting to create a keto strawberry no-churn ice cream. After I made this and we tasted it, I found I’d made an awesome keto strawberry…sherbet! Ha! Don’t worry! I’m already planning my next attempt at the perfect keto strawberry ice cream. My family loved this accidental sherbet and I hope you will too!
Let’s talk about strawberries!
Following the keto low carb plan means excluding many fruits from your diet. The great news is that, in moderation, strawberries are a super keto option! One cup of strawberries contains about 7-8 grams of net carbs. Strawberries provide us with folate, magnesium, manganese, potassium, and Vitamins A and C. They are also a good source of antioxidants and fiber. For comparison, blackberries contain about 6 net grams of carbs per cup, while raspberries contain about 7 net grams of carbs per cup. One cup of blueberries contains approximately 17-18 net grams of carbs.
What other ingredients go into this keto strawberry sherbet?
You’ll be amazed at the creamy delicious outcome of combining the few simple ingredients this recipe calls for. Strawberries are the star of this dish; but they need a little assistance to make a sweet sherbet!😊 For sweetness, we add keto powdered sugar. I use the Swerve brand. It contains zero calories and zero net carbs. It’s also delicious. The vanilla brings extra flavor to our sherbet. I love the addition of just a little salt to many of my sweet recipes. We use heavy whipping cream to help create the body and creamy texture of our sherbet.
One issue with making homemade ice cream and sherbet is that the mixture can become icy when you freeze it. The xanthan gum helps to keep this from happening as it helps to prevent the formation of ice crystals, which helps to keep the sherbet creamy. This mixture creates a light pink sherbet which is quite pretty. If you’d prefer a deeper pink, you can add a few drops of red food coloring. You can also top your sherbet with some keto whipped topping to create an extra decadent dessert if you’d like!

This is a fun and easy recipe to make; but there are a few things I’d like to share with you about it. For us, ½ cup of powdered sugar gave this sherbet the perfect amount of sweetness. You can taste your mixture and add a little more if you’d like. Another thing I recommend is using a glass container for your sherbet. I first tried this recipe using a metal loaf pan. It froze hard and had to set out a long time before it could be served. When I placed the sherbet into a glass dish, I only had to set it out a short amount of time and it was ready to serve. I covered my sherbet with a glass lid and no ice formed on the surface of my sherbet. You can also freeze your sherbet for a couple of hours and then place plastic wrap directly over the top of your sherbet to keep ice from forming on the top of your sherbet.

Keto Strawberry Sherbet

Ingredients
- 24 ounces fresh strawberries, hulled and chopped
- ½ cup powdered sugar substitute (Swerve)
- ½ teaspoon vanilla
- Pinch of salt
- 2 cups heavy whipping cream
- ⅛ teaspoon xanthan gum
- Optional: red food coloring
Instructions
1. Add strawberries, powdered sugar, vanilla, and salt to blender. Blend until smooth, about 30 seconds.
2. Add heavy whipping cream. Sprinkle xanthan gum over top of mixture. Add red food coloring, if using.
3. Blend until mixture is smooth and combined, scraping down sides with a spatula, if needed.
4. Pour mixture into a freezer safe bowl or pan. Cover and freeze for 6-8 hours or until set before serving.
