This crustless ham, Swiss, and chive quiche is true comfort food! The combination of flavors in this quiche is amazing and the dish will get rave reviews every time you serve it. Leftover ham never tasted so good!
Let’s talk about chives!
Chives are an incredibly flavorful herb that can add taste and texture to a wide variety of dishes. They are usually milder in taste than green onions; but can often be used in place of green onions. Chives are narrower and a bit more delicate than green onions. I usually chop my green onions with a knife; but I use herb scissors when cutting my chives. You could also use sharp kitchen scissors to cut your chives. Chives can be served raw; and you’ll often see them used as a garnish served atop dishes. They can also be added to casseroles, egg dishes, and soups. Because they are delicate and sensitive to heat, you’ll often see them added to hot dishes towards the end of the cooking time. We want a mild flavor from our chives, so we simply add them to the quiche mixture before baking.
Is this crustless ham, Swiss, and chive quiche difficult to make?
This is an easy dish to make; but there are a few things you can do to ensure yours comes out perfectly every time. First, you’ll want to spray your pie plate, so your quiche doesn’t stick to the dish. Next, I recommend sauteing your peppers and onion to soften them before adding them to your quiche mixture. You can use any kind of ham, but I think thicker pieces work best and give the best texture to this quiche. A ham steak or leftover ham works great for this dish. I like to shred my own cheese. This way I know no other ingredients have been added to the cheese and I think it melts much better. You’ll know your quiche is done when a knife inserted in the center comes out clean. Last, you’ll want to let your quiche set for 5-10 minutes before cutting and serving.

Helpful Hints:
*You can make up this quiche a day ahead of time. After pouring your quiche mixture into you pie plate, cover it and keep it in the refrigerator until ready to use. You will likely have to bake your quiche a little longer.
*I recommend using fresh chives for this quiche. In a pinch you can use dried. You’ll use 2 teaspoon of dried chives in place of the 2 tablespoons of fresh chives.
