For my coleslaw, I used a bag of prepared coleslaw mix. I find this an easy and convenient option. As long as you buy coleslaw mixes without added dressing, you’ll be good! Some mixes have more carbs than others, so always check the nutritional information when buying. You can also make homemade coleslaw if you’d prefer. To the coleslaw mix, we add some scallions. You may find these labeled as scallions or as green onions.😉I used both the green and white parts of the scallions for my coleslaw. The addition of fresh chopped cilantro gives this coleslaw incredible flavor.
How do you make the dressing for this creamy keto Asian coleslaw?
I love the bold and flavorful dressing that goes into this coleslaw! The combination of keto mayonnaise and peanut butter gives our dressing its creaminess. For my peanut butter, I look for peanut butter that contains only peanuts, or peanuts and salt. Then we add rice vinegar, tamari, keto brown sugar, grated fresh ginger, toasted sesame oil, fresh lime juice, salt, and pepper to complete this dressing. Make sure you are using plain rice vinegar and not seasoned rice vinegar as the seasoned contains sugar and carbs. Most tamari is gluten free, but I always check my labels to make sure. If you don’t have fresh ginger, you can use ground. You’ll want to add just under ¼ teaspoon. I love fresh lime juice, but you can use bottled if you’d like. Also, I always recommend you taste your salad and add more salt and pepper if desired.

We use a keto brown sugar substitute in this coleslaw. I prefer the Swerve brand of sugar for my brown, granulated, and powdered sugar. It is classified as a sugar alcohol and contains zero calories and zero net carbs. It is also incredibly delicious. The Swerve brand is a one-to-one substitution for regular sugar. So, if a recipe calls for one cup of sugar, you simply substitute one cup of Swerve instead. You can use any keto sugar substitute you’d like. Just check as you may need to use more or less depending on the kind you use to attain the correct amount of sweetness.

Ingredients
- 16 ounce bag coleslaw
- 3 scallions, chopped
- ½ cup chopped cilantro
- ⅓ cup keto mayonnaise
- 2 tablespoons keto peanut butter
- 2 tablespoons rice vinegar
- 2 tablespoons tamari
- 1 tablespoon brown sugar substitute (Swerve)
- 2 teaspoons grated fresh ginger
- 1 teaspoon toasted sesame oil
- Juice of 1 lime
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large bowl, add coleslaw mix. Cut or tear up any large pieces.
2. Add scallions and cilantro. Stir to combine ingredients.
3. In a small mixing bowl, add remaining ingredients. Stir to combine.
4. Pour dressing mixture over coleslaw mixture. Toss to combine.
