This keto raspberry lemon iced tea is refreshing and satisfying. It’s also incredibly delicious and incredibly low carb!
I’m so excited to share this keto raspberry lemon iced tea drink with you! My daughter, Rachael, loves raspberry iced tea, so I knew I had to come up with one that was keto. Yay! She loves it and I hope you will too!
Let’s talk about raspberries!
Raspberries are a wonderful keto fruit choice! One cup of raspberries contains approximately 7 net grams of carbs. Raspberries are a low calorie food and are also rich in nutrients. They provide folate, iron, magnesium, manganese, potassium, and vitamins C, E, and K. Another awesome thing about raspberries is they are a good source of fiber. One cup of raspberries contains 8 grams of fiber. Another great thing about raspberries is they can be used in sweet and in savory dishes!
What other ingredients go into this keto raspberry lemon iced tea?
Besides our star ingredient of raspberries, there are just 5 other ingredients in this flavorful iced tea. I used the Swerve brand granulated sugar for my iced tea. It contains zero calories and zero net carbs. It is also delicious. Swerve is a one-to-one substitution for sugar. This simply means when you substitute Swerve for regular sugar in a recipe, you use the exact same amount the recipe calls for. I love fresh lemon juice and find it gives this iced tea the perfect zing it needs. I also add just a touch of salt to this recipe. For the unsweetened iced tea, you can use your favorite prepared iced tea for this recipe, or you can make your own homemade unsweetened iced tea if you’d like.
Is this keto raspberry lemon iced tea difficult to make?
This is an easy recipe, but there are a few things you can do to ensure yours turns out perfectly every time. First, while your raspberries are simmering, you’ll want to use a spoon to press the raspberries against the sides of the saucepan to smash them up. Then, after simmering, use a fine mesh sieve to strain your mixture, pressing out as much liquid as you can. After straining, I ended up with one cup of liquid. If you’d like, you can save the solids for another use, such as to add to a smoothie. You’ll want to let your mixture cool before adding it to your unsweetened iced tea. Last, I recommend you give your iced tea a taste. If it’s too tart, you can add more unsweetened iced tea. If you’d like it even more tart, you can add more lemon juice.
