Well, I don’t know about perfect, but I know how my family likes their scrambled eggs and that’s what’s important to me! I only add salt and pepper to my eggs. I whisk my eggs well to add air to them, then cook them in butter over medium low heat. Once the butter is melted, I add the whisked eggs and let them set for a few minutes. Then I use a spatula to fold some of the eggs from the outside of the pan over the eggs in the middle of the pan and stir just a little. I repeat this process until the eggs are almost done, but still a bit loose. Then I remove them from the heat as they’ll finish cooking in the pan, and stir in the cheese!

Ingredients
- 1 pound ground pork sausage
- ⅓ cup diced green peppers
- ⅓ cup diced red peppers
- ¼ cup diced onion
- 1 tablespoon butter
- 12 eggs
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cup shredded cheddar cheese
- Optional: Serve with diced/sliced tomatoes or sliced avocados
Instructions
1. In a large skillet, over medium high heat, add sausage, peppers, and onion. Cook until sausage is no longer pink, breaking meat into small pieces as it cooks.
2. Drain grease. Remove sausage mixture to a plate. Cover with aluminum foil to keep warm. Wipe skillet.
3. Add butter to skillet and turn heat to medium low.
4. In a small mixing bowl, add eggs, salt, and pepper. Whisk eggs until smooth.
5. Add eggs to skillet. Cook and stir eggs until almost cooked through. Turn off heat and stir in cheese.
6. To serve, place ¼ sausage on a plate. Top with ¼ cheesy eggs. Repeat with 3 more plates.
7. Serve with diced or sliced tomatoes or sliced avocados if desired!
Notes
After cooking your sausage, another option for keeping it warm is to put the sausage in an oven safe container and set in a 200 degree oven while you cook your eggs.
