This soup combines both bacon and sausage to create an awesome combination that works perfectly with the cabbage, veggies, and flavorful broth in this soup. You can use either regular bacon or thick sliced bacon for your soup. For my sausage, I chose to use kielbasa. You can use any cooked sausage you’d like. I always check the nutrition labels for my sausage to ensure there are no added ingredients I don’t want, and to ensure the carb count is low. You can use beef, chicken, or pork sausage for this soup. If you want a spicier option, you could also use Spanish chorizo for your soup.
What other ingredients go into this keto sausage and cabbage soup?
Don’t worry about the long ingredient list for this soup. Most, if not all, of the ingredients are things you likely already have hanging around in your pantry and refrigerator! We add onions and garlic to our soup. I have learned you only have to add a small amount of onions and garlic to a recipe to achieve awesome flavor, and this helps keep the carb count down. I used chicken broth for my soup, but you could use beef or vegetable broth if you’d prefer. Adding a large can of diced tomatoes and just a little tomato paste gives this soup an awesome tomato base, but also keeps the carb count down.
I added just a little butter for richness and flavor. For my mustard, I used a combination of Dijon and spicy brown. You can use any low carb mustard or combination of mustards you’d like. Tamari helps to create a great depth of flavor, and the keto sugar cuts down on the acidity of the tomatoes and helps to round out our flavors. For seasoning, we simply add some oregano, paprika, and pepper. Since our meats are salty, I didn’t add any additional salt. You can taste your soup and add more salt if needed. Last, we add chopped cabbage which gives our soup flavor and texture and makes it incredibly delicious and filling!

Ingredients
- 6 ounces bacon, diced
- ⅓ cup diced onion
- 2 garlic cloves, minced
- 12 ounces cooked sausage, sliced then cut in half
- 6 cups chicken broth
- 1 (28 ounce) can petite diced tomatoes
- 2 tablespoons butter
- 2 tablespoons tomato paste
- 1 tablespoon Dijon mustard
- 1 tablespoon spicy brown mustard
- 1 tablespoon tamari
- 1½ teaspoons granulated sugar substitute (Swerve)
- ¼ teaspoon oregano
- ¼ teaspoon paprika
- ¼ teaspoon pepper
- 1 medium head green cabbage, chopped
Instructions
1. In a medium skillet, over medium heat, fry bacon with onions until bacon is at desired crispness. Add garlic during last minute of frying.
2. Drain bacon grease, reserving one tablespoon. Place bacon mixture into a large stockpot and set aside.
3. In the same skillet, over medium high heat, fry sausage in reserved bacon grease until sausage is browned.
4. Add sausage to the large stockpot.
5. To the stockpot, add all remaining ingredients, except cabbage. Stir to combine ingredients.
6. Add cabbage and stir to combine.
7. Over high heat, bring soup to a boil. Decrease heat to medium and simmer for 15-20 minutes, or until cabbage is tender.
