You can fry your bacon to your desired doneness level, depending on how crisp you prefer your bacon.

We saute some diced red pepper, onion, and jalapeno to create some awesome taste and texture to our quiche. I seeded my jalapenos and removed the membranes to cut down on the heat level. If you’d like more heat, you can add the seeds and membranes to your quiche. For seasonings, we add a combination of chili powder, dry mustard, cumin, and salt to our egg and heavy whipping cream mixture. Last, we add pepper jack cheese to give us an extra kick of heat and some awesome flavor. If you’d like a bit less heat, you can add any good melting cheese or combination of cheeses for your quiche. Some good options include cheddar, gouda, Monterey Jack, or mozzarella cheese.

Ingredients
- Avocado oil spray
- 1 tablespoon butter
- ¼ cup diced red pepper
- 2 tablespoons diced onion
- 1 jalapeno, seeded, membranes removed, diced
- 6 eggs
- 1 cup heavy whipping cream
- ½ teaspoon chili powder
- ½ teaspoon dry mustard
- ¼ teaspoon cumin
- ⅛ teaspoon salt
- 1 cup diced cooked ham
- 6 ounces bacon, fried and crumbled
- 2 cups shredded pepper jack cheese, divided
Instructions
1. Pre-heat oven to 375 degrees. Prepare a 9 or 10 inch pie plate by spraying with avocado oil spray. Set aside.
2. In a small skillet,over medium heat, saute peppers, onion, and jalapenos in butter for 3-4 minutes, or until vegetables start to soften. Set aside.
3. In a large mixing bowl, add eggs. Whisk until smooth. Add heavy whipping cream, chili powder, dry mustard, cumin, and salt. Whisk to combine.
4. Add pepper, onion, and jalapeno mixture. Stir to combine ingredients.
5. Add ham, bacon, and 1½ cups of shredded pepper jack cheese. Stir to completely combine ingredients.
6. Pour mixture into prepared pie plate. Top evenly with remaining ½ cup shredded cheese.
7. Bake for 40-50 minutes or until knife inserted comes out clean.
8. Allow quiche to set for 5-10 minutes before serving.
Notes
If you're using ham packaged in water, you’ll want your ham as dry
as possible to avoid having a watery quiche. You can use paper towels to press out the extra moisture from the ham.
