Let’s talk about coleslaw!
I used a packaged coleslaw mix for this salad. Most bagged coleslaw mixes contain mostly green cabbage and then add a little purple cabbage and carrots. As a rule, I stay away from carrots because they have a higher carb count. . But there is so little of them in coleslaw mixes and the carb count of the mix is still quite low, so this is one of my exceptions to the rule.😉 When you purchase your coleslaw mix, just make sure there is no dressing with it as this will likely be a high carb dressing. If you’d like, you can always make your own coleslaw mix. You can choose how much of each cabbage you’d like to use. You can also choose if you want to add carrots and, if so, how much you add.
What meat and cheese goes into this keto chicken cordon bleu coleslaw?
As with traditional chicken cordon bleu, we are using chicken, ham, and Swiss cheese in our coleslaw. Staying true to the original, I used chicken breasts for this dish. You can use any kind of chicken you’d like. You can also use a rotisserie chicken for a nice shortcut. Traditional chicken cordon bleu uses thinly sliced deli ham. You can use any cooked ham you’d like for this coleslaw. It is a great way to use up leftover ham. Hams can vary quite a bit in their carb count based on added ingredients, so I always read the nutritional label when buying. For my dish I used Simple Truth Brand uncured smoked ham. For the Swiss cheese, I varied from traditional chicken cordon bleu which uses thinly sliced cheese. I used a block of cheese and cubed it because I wanted to add more texture to my coleslaw.
How do I make the dressing for this keto chicken cordon bleu coleslaw?
The dressing for this dish is incredibly easy to make and it is incredibly delicious too! We start with the combination of both keto mayonnaise and sour cream. This gives our dressing awesome creaminess and taste. Next, we add Dijon mustard, tamari, keto sugar, garlic powder, salt, and pepper. If you’d prefer, you can use yellow mustard or even spicy brown if you’d like to add a little kick to your coleslaw. Tamari is a soy sauce, but most brands are gluten free. Just check your labels when buying to make sure. I used the Swerve brand of sugar for my coleslaw. It contains zero calories and zero net carbs, and I love the taste of it. For seasoning, you can always taste your coleslaw add more salt and pepper if you’d like.
