We combine sweet, savory, and sour ingredients to make a dish that is incredibly delicious and incredibly low carb! This dish contains a whole pound of bacon. Isn’t that great!😊We then add a little diced onion and garlic. These add both flavor and texture to this dish. I used ripe on the vine tomatoes for my jam because they are incredibly juicy. You can use any kind of tomato you’d like for this dish. Then for a little sour element, we add a combination of apple cider vinegar and balsamic vinegar. To help balance our flavors, we add a combination of keto granulated and brown sugar to this dish. For seasonings, we use smoked paprika, salt, pepper, and a pinch of red pepper flakes. If you want a little more heat in your jam, you could add more red pepper flakes.
Is this a difficult dish to make?
This is a fun and easy recipe, but I do have a few tips so yours will come out perfectly every time. First, I like to dice my raw bacon and then fry it until done. You can fry whole pieces of bacon and then crumble them if you’d prefer. Next, when you add your tomatoes to the skillet, add all the awesome tomato juice as well. I think this dish contains the perfect amount of sugar, but you can taste yours and add more if you’d like it on the sweeter side. Ingredients
- 1 pound bacon, diced
- ¼ cup diced onion
- 2 garlic cloves, minced
- 2 pounds ripe tomatoes, cored and chopped
- 2 tablespoons apple cider vinegar
- 1 tablespoons balsamic vinegar
- ¼ cup granulated sugar substitute (Swerve)
- 2 tablespoons brown sugar substitute (Swerve)
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Pinch red pepper flakes
Instructions
1. In a large skillet, over medium high heat, fry bacon until crispy. Remove bacon to a plate. Drain all but 1 tablespoon bacon grease.
2. In same large skillet, over medium heat, saute onions in reserved bacon grease until onion starts to soften, about 4 minutes. Add garlic during last minute of sauteing.
3. Add bacon and all remaining ingredients and stir to combine.
4. Increase heat to high and bring mixture to a boil.
5. Decrease heat to medium, and simmer, stirring occasionally, until mixture is reduced and thickened to jam consistency, about 1¼ hours.
6. Serve warm, at room temperature, or cold. Refrigerate leftover jam in a covered container.

The time it will take for your mixture to simmer and come to the consistency of jam will vary. I recommend you check yours at the 45 minute mark, then check every few minutes to ensure your jam doesn't burn.
