Chopped cilantro and diced onions add great taste and texture to this dish. You can chop your cilantro with a knife; but I use one of my favorite kitchen helpers, my herb scissors, for this. They do an awesome job and are a time saver. To balance out our texture and flavors, we add olive oil, red wine vinegar, and keto sugar. I used the Swerve brand for my sugar as it contains zero calories and zero carbs. It’s also delicious. For seasonings, we simply add chili powder, salt, and smoked paprika. This is a mild salsa. If you’d like a hotter salsa, you could add more chili powder or some diced jalapenos.

- 1 (28 ounce) can petite diced tomatoes
- 1 cup chopped dill pickles
- ¼ cup chopped cilantro
- 2 tablespoons diced onions
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon granulated sugar substitute (Swerve)
- ½ teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon smoked paprika
