I used a bag of coleslaw mix for my dish. I love to make most everything homemade; but bagged coleslaw mixes are one of the quick and easy options I love. And although carrots are a food I avoid, coleslaw mixes containing them are an exception to my rule since there are so little of them added and the carb count of the mixes is still low. You can always make your own coleslaw mix as well! To our coleslaw, we add some diced onion, red peppers, and jalapeno. Then we add some chopped cilantro. Yum! If you haven’t seen them, you might want to check out these herb scissors. They make chopping herbs a breeze and will save you time in the kitchen. I love mine!
How do you make the dressing for this coleslaw?
Our dressing is creamy and delicious. For our base, we combine keto mayonnaise, salsa, and sour cream. I like the Chosen Foods brand avocado oil mayonnaise, but you can use any keto mayo. For your salsa, you’ll want to check your nutritional labels and choose a salsa with no added sugar and one that is low carb. You can use homemade salsa as well. We add a little keto sugar to balance our flavors, then add a little salt and pepper. I used the Swerve brand for my sugar. They make brown, granulated, and powdered sugar, all of which contain zero calories and zero net carbs. I recommend you taste your coleslaw and add more salt if you’d like. If possible, after adding your dressing to your coleslaw, you’ll want to let your salad set in the refrigerator for a couple hours to allow the flavors to meld together.

This coleslaw is a versatile dish which goes well with any number of main dishes. It would make a great side for your fajitas, tacos, or your favorite Mexican main dishes. Ingredients
- 16 ounce package coleslaw mix
- 3 tablespoons diced onion
- 3 tablespoons diced red peppers
- 1 jalapeno, seeded, membranes removed, diced
- ¼ cup chopped cilantro
- ¼ cup keto mayonnaise
- ¼ cup salsa
- ¼ cup sour cream
- 1 teaspoon granulated sugar substitute (Swerve)
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large mixing bowl, add coleslaw mix. Cut or tear up any large pieces.
2. Add diced onion, peppers, jalapeno, and cilantro. Stir to combine ingredients.
3. In a small mixing bowl, add remaining ingredients. Stir to combine.
4. Pour sour cream mixture over coleslaw mixture. Toss to combine.
