Let’s talk about cucumbers!
Cucumbers are an awesome choice when following a low carb keto plan! They are a low calorie, low carb food which are also rich in their nutrient content. One cup of chopped cucumbers contains only 3 grams of net carbs. They also provide a source of magnesium, manganese, potassium, and vitamins C and K. They also provide us with fiber. Cucumbers have a high water content, so they also help with keeping hydrated. For best results, I recommend you peel your cucumbers and remove the seeds before adding the other ingredients when making this sauce. I like to make my tzatziki sauce with diced cucumbers, but you can grate your cucumbers as well. Just make sure you dry your cucumbers as much as possible for this sauce.
What other ingredients go into this low carb tzatziki sauce?
To our cucumbers we add Greek yogurt. I used the brand Two Good because it is very low carb and it’s delicious. You can use any keto yogurt for your sauce. Next, we add olive oil, lemon juice, white wine vinegar, minced garlic, dill, salt, and pepper. White wine vinegar is smoother and milder than distilled white vinegar and I recommend it for this sauce. I love fresh dill and that is what I used for my sauce. If you use dried dill, you’ll want to use 1 teaspoon of dried dill in place of the 1 tablespoon of fresh dill this recipe calls for. I suggest you taste your sauce and add more salt and pepper if you’d like!

You have some amazing keto options for serving this sauce! It can be served as a dip with raw vegetables, keto crackers, cheese whisps, or pork rinds. You can dip your favorite keto bread in it as well. Tzatziki makes for an impressive sauce to serve with meats, including beef, chicken, lamb, pork, and seafood. It especially pairs well with meatballs. You can serve tzatziki as a topping for burgers and keto sandwiches or with your favorite cooked vegetables. Low Carb Tzatziki Sauce

Ingredients
- 1 medium cucumber, peeled, seeded, and diced
- 1½ cups keto plain Greek yogurt
- 2 tablespoons olive oil
- 2 teaspoons fresh lemon juice
- 2 teaspoons white wine vinegar
- 2 garlic cloves, minced
- 1 tablespoon chopped fresh dill
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. Squeeze as much liquid from diced cucumbers as possible. Set aside.
2. In a medium mixing bowl, add remaining ingredients. Stir to combine.
3. Add cucumbers and stir to completely combine.
4. For best results, allow to chill in the refrigerator for an hour before serving.

For my yogurt, I used the Two Good brand. You can use your favorite keto, low carb plain Greek yogurt for this sauce.
