Both vegetables are also a good source of fiber. One cup of broccoli contains only 6 net grams of carbs. Asparagus is even lower in carbs, with one cup containing only 4 net grams of carbs. Another great thing about these vegetables is the number of ways you can prepare them and incorporate them into keto dishes. This creamy low carb broccoli asparagus soup is wonderfully rich and delicious! This is a great comfort food soup your whole family will enjoy!
Ingredients
- 8 ounces bacon, diced
- 3 tablespoons diced green peppers
- 3 tablespoons diced onion
- 3 tablespoons diced red peppers
- 16 ounces asparagus, trimmed and chopped
- 16 ounces broccoli, trimmed and chopped
- 6 cups chicken broth
- 2 tablespoons chopped fresh parsley
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ cup heavy whipping cream
- ½ cup sour cream
- Optional: top with additional bacon or chopped parsley
Instructions
1. In a medium skillet, over medium high heat, cook bacon until done. Remove bacon to a plate. Drain and discard all but 2 tablespoons bacon grease.
2. In skillet, over medium heat, saute peppers and onions in reserved bacon grease until they start to soften, about 4 minutes.
3. To a large saucepan, add sauteed vegetables, asparagus, broccoli, chicken broth, parsley, garlic powder, smoked paprika, salt, and pepper. Over high heat, bring mixture to a boil. Decrease heat to medium and simmer, covered, for 30 minutes or until vegetables are tender. Add bacon during last 10 minutes of simmering.
4. Use an immersion blender and blend to desired consistency.
5. Add heavy whipping cream and sour cream. Stir until combined.
6. Top with additional bacon or chopped parsley if desired.
