Cauliflower is an awesome low carb nutrient rich food! One cup of cauliflower contains only about 2 net grams of carbs. Using riced cauliflower in place of regular rice is a great option for making some satisfying and delicious keto dishes. For this dish, you can rice your own cauliflower using a box shredder or a food processor. You can also buy fresh riced cauliflower if you’d like. I usually like to go the homemade route when possible; but I also like to have some frozen cauliflower rice in my freezer too. I have found frozen packaged cauliflower rice has great taste and texture, so this is one time I don’t always go with fresh and homemade.😉If you rice your own cauliflower, you can freeze it in 12 or 16 ounce portions so you’ll always some a quick low carb go-to option available.
What other ingredients go into this cilantro lime cauliflower rice?
When I saute vegetables, I often use a mixture of butter and olive oil because I love the flavor it creates. It only takes a little onion and garlic to bring a lot of flavor to our dish and this helps to keep our carb count down as well. I used fresh lime juice for the incredible zest it brings to the dish, but you can use bottled juice if you’d like. If you use bottled, you’ll want to add about 2-2½ tablespoons, depending on how much lime flavor you’d like. I recommend using fresh cilantro, if at all possible, for this dish. Fresh cilantro adds amazing flavor and color to our cauliflower. Last, we simply add some salt and pepper. You can make this dish, then give it a taste and add more salt if you’d like.
How do I make this cilantro cauliflower rice?
This is a fun, quick, and easy dish to make. I used frozen riced cauliflower and simply microwaved it. If you don’t want to microwave, alternately you can saute your cauliflower in a little avocado oil or butter, over medium heat, for about 5-10 minutes, or until it is tender. I sauteed my onion and garlic while my cauliflower was cooking. In order not to burn your garlic, you’ll want to add it during the last minute of sauteing. Then simply add your cauliflower, lime juice, cilantro, salt, and pepper to the onions and garlic. Give the mixture a quick stir to combine the ingredients, and your rice is ready to serve. This dish also re-heats well. You can re-heat in the microwave or in a skillet on the stove.

Cilantro Lime Cauliflower Rice
This cilantro lime cauliflower rice is an excellent fresh and tasty low carb dish! This vibrant cauliflower rice will be a welcomed addition to any meal!
Ingredients
- 24 ounces riced cauliflower
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 tablespoons diced onion
- 2 garlic cloves, minced
- Juice of 1 lime
- ¼ cup chopped cilantro
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a covered microwave safe bowl, microwave riced cauliflower for 5-7 minutes, or until tender.
2. While rice is cooking, in a medium saucepan, over medium heat, add butter and olive oil.
3. Once pan is heated, add diced onion to butter and oil. Saute until onion starts to soften, 3-4 minutes, stirring occasionally. Add minced garlic during last minute.
4. Add cooked cauliflower rice, lime juice, cilantro, salt, and pepper. Stir to combine.
5. Serve immediately.
Notes
