Let’s talk about poblano peppers!
Poblano peppers are a type of chili pepper that originated in Mexico. They are dark green in color and are quite a bit larger than jalapeno peppers. If left to ripen, they turn red and become a little hotter. Dried poblano peppers are called ancho chiles. The heat level of poblanos is milder than jalapenos and poblanos have a faint sweet aspect to them as well. Poblanos are low calorie and low carb. They also provide vitamins A, B2, and C, and are a good source of fiber.
How do I roast poblanos for this creamy keto roasted poblano dressing?
I have an awesome market near me that roasts all kinds of peppers, so I bought some roasted poblanos from them. But it isn’t difficult to roast peppers. When I roast my own peppers, I use my oven. I broil my peppers, turning once or twice, until all sides are nicely charred. You can also roast in the oven at 400-425 degrees for 30-40 minutes or you can grill them. I will tell you, my cats do not like the smell, and they all go to another room when I roast peppers.😊After roasting your peppers, you’ll want to seal them in a plastic bag and let them set for 10 minutes to steam them. This makes removing the skin easier. Peel off as much of the skin from your peppers as possible. The seeds and membranes of peppers contain the most heat, so I remove both.
How can I serve this creamy keto roasted poblano dressing?
You can serve this as a dressing, dip, or sauce. As a dressing, it works well with any green salad, using any type of lettuce or using spinach. You can even add some to your next batch of coleslaw to give it a nice spicy kick. This is such a versatile dressing and can be used as a dip for raw vegetables, keto crackers, cheese whisps, and pork rinds, just to name a few. You can also use this as a sauce to drizzle over meats, vegetables, and egg dishes. Stir it into your next batch of riced cauliflower or mashed cauliflower for an extra special treat. You’ll be sure to enjoy the creamy spicy addition this dressing will bring to so many dishes!
