When you want a fun salad change-up, this creamy keto Mediterranean coleslaw will satisfy! Get ready for the recipe requests when you serve this salad!
This creamy keto Mediterranean coleslaw is such a fun twist on coleslaw! I don’t think one can have too many keto salad recipes and I love experimenting with different ingredients for mine. This coleslaw has a great balance of creamy, crunchy, and Mediterranean flavors.
Let’s talk about the ingredients in our coleslaw!
I used a bag of coleslaw mix for my dish. And while I normally avoid carrots because of their carb count, coleslaw mixes are one of my exceptions. The amount of carrots in the mix is low and the carb count of the mix remains low. If you’d like, you can always make your own coleslaw mix. To make your own, simply choose what type of cabbage or cabbage combination you’d like to use and shred your cabbage with a knife. You can then choose if you’d like to add any grated carrots to your mix. To our coleslaw mix, we add crumbled feta cheese, Kalamata olives, red peppers, and red onion. Yum!😊Just an FYI, when you buy crumbled feta cheese, it will usually contain additional ingredients such as powdered cellulose. I like to buy a block of feta cheese and crumble it myself to avoid unnecessary ingredients.
How do I make the dressing for this creamy keto Mediterranean coleslaw?
The dressing for this coleslaw is creamy and delicious! There are a few things we do with this dressing to also keep it keto and low carb. First, we start with a combination of keto Greek yogurt and keto mayonnaise. I used the Two Good brand of yogurt for my dressing. If you can’t find a keto low carb yogurt, you can substitute with sour cream. I used the Chosen Foods brand avocado oil mayonnaise, and it is my go-to mayo. When buying mayonnaise, you’ll want to make sure it doesn’t have any added sugar or other ingredients you don’t want. The red wine vinegar gives our dressing a fun zip of flavor. Then we add oregano, keto granulated sugar, salt, and pepper to complete our dressing. I used the Swerve brand for my keto sugar as it contains zero calories and zero net carbs. It’s also delicious!
What can I serve with this creamy keto Mediterranean coleslaw?
This dish pairs nicely with any number of dishes. It would make an awesome side for burgers, keto sandwiches, or keto lettuce wraps. Coleslaw always goes great with pulled pork or pulled chicken. One of our fun pulled pork favorites is keto root beer bbq pulled pork. This dish pairs nicely with all kinds of meats. You can serve it with grilled chicken, pork chops, meatloaf, and even alongside a nice steak! Add it to some keto tacos or fajitas to make an extra special meal. It would also be a great addition to your next barbecue! Another fun idea is to have a Mediterranean night and serve this as one of your sides!
