Let’s talk about the main ingredients for our keto chopped caprese salad!
The main ingredients for our salad are tomatoes, fresh mozzarella, and fresh basil. Isn’t that an awesome combination! I have an amazing market not too far from me where I can get a variety of fresh vegetables, including fresh tomatoes. For my caprese salad, I used 4 medium sized vine ripened tomatoes. You can use any medium sized tomatoes you’d like for this dish. Fresh mozzarella is absolutely delicious, and I’d highly suggest this is what you use for this salad. It is creamy and delicate, with amazing flavor and texture. Fresh basil adds awesome color and flavor to our salad. I do use dried basil for certain dishes; but for this salad I recommend using fresh basil if possible.
What goes into the dressing for this keto chopped caprese salad?
The dressing for our salad comes together quickly and includes just a few ingredients; but the resulting flavors are amazingly delicious! We combine olive oil, balsamic vinegar, keto granulated sugar, Italian seasoning, salt, and pepper to create an amazing vinaigrette for our chopped caprese salad. I love using fresh and healthy ingredients while also keeping the costs as low as possible. That is why I buy from local markets, and I buy in bulk when possible. When buying balsamic vinegar, you’ll want to check your nutritional labels as some brands are much higher in carbs than others. My go-to keto sugar for most dishes is the Swerve brand as it contains zero calories and zero net carbs. It’s also delicious! I recommend you taste your salad and add more salt and pepper if you’d like.
How can I serve this chopped caprese salad?
This is a versatile dish that can be served as an appetizer salad, side dish, or as a quick and easy snack.
