We start with keto semi-sweet chocolate chips. Just place them in a medium bowl and set them aside. Then we heat to boiling a mixture of heavy whipping cream, keto granulated sugar, and salt. After it boils, we add the vanilla, then pour the mixture over the chocolate chips and stir until they melt and the mixture is smooth. At this point, you can leave the mixture in the bowl and refrigerate it until set. You can also evenly divide the mixture into four ramekins or serving dishes and refrigerate that way.

There are a few things we do to make this dish both delicious and low carb. I used Lily’s semi-sweet chocolate chips. They are amazingly rich and contain zero net carbs. Heavy whipping cream gives our dessert a rich and creamy texture and is also low in carbs. For the sugar, I used the Swerve brand. It contains zero calories and zero net carbs. It also tastes amazingly like regular sugar. We add just a touch of salt and a little vanilla to bring some great flavor to our dessert. If you’d like, when ready to serve, you can top your pots de creme with some keto whipped topping or chocolate shavings. For mine, I topped it with some homemade keto whipped cream and simply grated a chocolate chip or two over that.
How do I make homemade keto whipped cream?
It is amazingly easy to make keto whipped cream. It’s also thick, rich, creamy, and delicious! Once you make your own, you’ll likely never want it any other way. I recommend you chill your mixing bowl and beaters for 15-20 minutes before using. Then simply add 1 cup of heavy whipping cream, 2 tablespoons keto powdered sugar, and 1 teaspoon of vanilla to the chilled bowl. You’ll want to use an electric mixer and beat until stiff peaks form. This means when you remove the mixer, the whipped cream forms a peak and it completely holds its shape. You can easily double this recipe as well. Then just store, in a covered container, in the refrigerator until ready to serve. If you’d like, you can even play around with using different flavored extracts for your whipped cream.

- ¼ cup granulated sugar substitute (Swerve)
