You’re going to love the bold flavors in this loaded keto chicken salad! Combining chicken, cheese, bacon, celery, and onions in a creamy seasoned dressing is a winning combination! My family loved this version of chicken salad and I hope you will too!
Let’s talk about the ingredients for our salad!
I had boiled a whole chicken and used both light and dark meat for my chicken salad. You can use all light meat, all dark meat, or a combination for your salad. A rotisserie chicken is a quick and easy option as well. For my cheese, I used cheddar and I shredded it. You can use a different cheese if you’d prefer. Some great options include colby, gouda, Monterey Jack, or mozzarella cheese. If you’d like to add a little heat, you could even use pepper jack cheese. You can shred or cube your cheese, depending on which texture you’d like. We then add cooked and crumbled bacon, chopped celery, and green onions. These give our salad amazing flavor and add great texture! For your bacon, you can use regular or thick cut for this salad.
What goes into the dressing for this loaded keto chicken salad?
Our dressing is simple yet delicious! For our creamy texture, we combine keto mayonnaise and sour cream. I used the Chosen Foods brand avocado oil mayo. When buying mayonnaise, you’ll want to make sure there are no added sugars or oils you don’t want. We then add keto brown sugar and Dijon mustard. These give our dressing an amazing flavor profile. You can use yellow mustard or even a spicy brown if you’d prefer. For seasonings, we simply add garlic powder, salt, and pepper. Since our bacon and cheese contain a good amount of salt, we only add a little to our dressing. I recommend you give your salad a taste and add more salt if you’d like.
How can I serve this loaded keto chicken salad?
You can numerous low carb keto options for serving this salad. I can attest to the fact it tastes great all on its own! You can also serve this as a dip. You can use raw vegetables, cheese whisps, pork rinds, or keto crackers for dipping. Cheese slices also work great for dippers. This chicken salad can be served atop some lettuce of spinach. You can then add some sliced tomatoes or avocados if you’d like. It can be made into an awesome lettuce wrap too.
